Say, is it a good idea to get a mini punching bag designed for Pokémon for my Lucario, Lucca, so she does feel left out when I work out in the basement? I battle with her and the rest of my team VERY regularly and take her out whenever I go jogging, but she still stares kinda sadly when I workout, so I think she may be feeling left out.
i think that's a fine idea! lucario are intelligent and sensitive pokemon, and i think she'd enjoy getting to mirror your behavior.
just make sure to supervise any time she uses it, because lucario are extremely powerful, and you don't want her to start using moves while she's in your house. you need to be there to call her off if she uses any sort of type energy on the punching bag. it may take her a little while to figure out how she's allowed to use it, but given that lucario are such perceptive pokemon, i think she'll get the hang of it before too long.

here’s some food for thought: is it possible to give a Pokémon an unethical nickname, as in, a nickname that would be so mind numbingly stupid it would be cruel to bestow unto an innocent Pokémon?
i think there are plenty of names that would be unethical to give a pokemon, but not because the pokemon would care. pokemon don't know what their names mean. i know a guy with a lopunny that he calls "ass hole." he got it as a buneary, so clearly it liked him enough to evolve.
i will not list the names that i would consider unethical for pokemon because they are slurs.

I have a Baltoy that only spins on it's head. I know the Pokedex says that they sometimes do that, but mine only ever does that. Should I see a vet? Could it be just weird, but otherwise a non-issue? Could there be issues if it keeps up this habit after evolving? The little spinner doesn't seem to be in destress or pain from what I can tell.
since your pokemon should be getting regular vet checkups anyway, your vet will notice the behavior anyway. if you're not seeing signs of distress, and its ability to perform natural behaviors and take care of its needs aren't being impeded, it's likely not causing any issues. however, it's always good to double check.
this could just be a personal preference on your baltoy's part- some pokemon are quirky- but it could also be the result of a neurological issue or some other problem causing it difficulty in balancing on its foot. i can't say which one, which is why talking to your vet is so important.

do you think some shiny coloration comes from an attempt to blend in better with their surroundings? like psyduck being blue and ekans being green. not that evolution is a conscious or sudden thing, just maybe that's a factor somehow
Absolutely not. Long term evolution happens as a result of certain individuals being more or less successful in their environments; pokemon are the colors they are because it works for them. For instance, ekans is purple because it's poisonous, which wards off predators. A green ekans is actually at a disadvantage in the wild, since it doesn't have that warning sign.
Shiny coat colorations are a genetic mutation, not evolution at play! I get where you got the idea, though.
