One of the hurdles to post-game drama goth polyamory is that Astarion and Shadowheart have polar opposite desires for their post-abuser recovery.

Shadowheart will tend to gravite to her roots and seek healing and a sense of self alby settling down with her parents and a few dozen therapy animals.

Astarion considers such a fate 'utterly boring', might suffer the idea out of love but also with hope that some new drama will occur down the line to rattle things up so it's not actually domestic anymore, and even outside of that part expresses an interest in travelling and adventuring.

She wants quiet, he wants danger and excitement.

So ultimately the way this is going to have to happen is that Vel and Astarion do the adventuring while frequently dropping by Shadowheart's place for a visit that evolves into a relationship turning these visits to lengthy periods of domestic bliss where we stress out Arnell with his daughter's extremely worrying taste in partners until one of them gets restless. Sometimes Astarion will go adventuring solo and Vel and Shadowheart homestead together for a while. Sometimes Shadowheart will come on a few adventures, probably more often with time, since she also expresses an interest in seeing the world and new experiences.
