Francis genuinely will just go out into the wilderness when he's not on a directive to gather mushrooms, berries and other useful (or tasty) things. Obviously it depends on where exactly he is at that particular moment but its something he genuinely enjoys doing to unwind and relax, especially after an especially high-octane hunt.

Oh, right. Greatsword main. He's never been anything other than a Greatsword main. He can use any weapon you give him in theory because I imagine Hunters are trained to do so, but he'll honestly suck at it.
Give him a Greatsword though and he's genuinely terrifying.

His thoughts on Zoh Shia are mixed. Honestly, his thoughts on Wyveria as a whole are mixed.
On one hand; the Guardians are fascinating. They have just as much of a right to exist as any other creature does, even if they are genuinely implied to be mildly mentally unstable at best. On the other? They are unstable. At the very least, their dependance on Wyvern Milk limits their range, and they do have natural predators like Xu Wu.
Zoh Shia? Yeah, no. He knows what that thing is made of. It isn't like Arkveld. Its a thing that should not exist and if it is allowed to keep existing it will cause absolute destruction. He's encountered Fatalis before, and he recognised the signs in Zoh Shia pretty much the second he got a good look at it.
Until they find a way to make sure it stays dead that wouldn't ruin the entire ecosystem by proxy, he will keep killing it every time it regenerates.

I want to highlight these tags from @wylkstone because its something I try and work into my portrayal of The Hunter.
They're a veteran who has been through so much shit. They're a walking extinction event in armor who self-regulates through both a respect for the natural world and binding themselves firmly to the rules of the Hunter's Guild (with the exception of Zoh Shia).
That isn't to say even if they didn't they'd run around killing everything, but to a certain extent Francis is very much a thrill-seeker. Hunting is his entire life. It would be very easy for him to find a less-than-ideal reason to hunt and he knows that about himself, which is why both Alma and Nata function as his impulse control simply by existing (admittedly in different ways).
Alma is his direct leash. She's the one who gives him the thumbs up. Nata, simply by existing, is someone who pushes him to set the best example he can - which also helps him immensely.

Nata is nothing but curious, and no doubt the boy will one day have the courage to ask him what he has seen.
And on that day, he will tell him almost everything. Almost, because there are some things that he is sworn to secrecy over. Some hunts that will remain firmly within his own mind and nowhere else; not even truly noted down in reports beyond the most vague of terms. Perhaps that was for the betterment of all; such things - were they to become common knowledge - would spark a level of fear he was not sure the world was ready for.
The Kingdom of Schrade had burned over a thousand years ago and yet most saw it as a mere fairytale that had grown far out of control.
Perhaps that was for the best.

"I thought so. I made a point to pick up an assignment or two here just in case you wanted to. Gives us a reason to hang around." Francis replied with another warm smile as he snapped out of his thoughts and rubbed the back of his head. "I admit, I could stand to come visit more often."
He glances out of the overhang of the tent for a long moment and over the rocky terrain. It wasn't unbearably warm right now, thankfully.
"A lot of the biomes in the Forbidden Lands - to an extent even your home in the Ruins - are artificial microcosms of ecosystems you can find all over The Old World, and even the New World from what I've read." He explains. "So while I've hunted in my fair share of Volcanic belts over the years, I've just never handled the heat all that well."
NATA'S SMILE FALTERS, but not out of sadness or disappointment. Instead there's curiosity, bewilderment written upon his expression at the Hunter's thoughtful words. They'd piqued his interest; Nata had never prodded for such sensitive information, recalling somewhat in Alma's voice that it would be rude of him to do so. However, he wished he could pull back the curtains a bit more—to learn just what hardship that his mentor had endured.
He remembers Alma saying that the Hunter was like him; they were both familiar with loss, perhaps even still coming to grips with it. While he'd always wondered what that meant, at one time, Nata had been too afraid to ask.

. . . That wouldn't change today, but it wasn't because he was scared. It was because he was sympathetic; this was a joyful time, and he did not want the Hunter to recall such horrible memories during it. The apprentice's chest swells with pride at the praise, eyes shimmering brightly.
"Of course I wanna stay!" He chirps eagerly. "I'm sure Mr. Yabran and the others would appreciate it, too. They always ask me how you're doing whenever I come here, Hunter."

After all it is not as if the concept of bonding with Monsters is new - both Popo and Aptonoth are used by communities and villages all over the known world. And then you have creatures such as Canynes or the Seikret that work with Hunters."

In my personal take on things, one monster is usually enough to craft the equipment you need from it (within reason of course).
The fact you have to hunt things 2-5 times in game is just that; a gameism.

Thinking about how, pound-for-pound, Reverto in MHS2 is the strongest Battle Buddy you can have - and he's a Hunter who uses a non-elemental Greatsword (an Impudent Cheda). In fact he can often outdamage you as the player character with your Monsties.
It just goes to show how genuinely superhuman Hunters in particular are in strength.

Francis, as a matter of course, tries not to kill Monsters unless he absolutely has to. If he can capture them for study before releasing them then he will do that at every turn (mind you, wounded animals tend to be the most dangerous so he judges on a case-by-case basis).
This is both because of his deep care for the balance of nature and as a self-imposed limit on himself to stop himself from accidentally going too far.

Yeah, honestly, I think this really does sum it up lmao. Not that I think the Hunter would intentionally do so, but they most certainly could, and certain dialogue choices can make it so your Hunter comes across as (in Alma's words) a complete workaholic who certainly enjoys hunting.
Granted I think that depends entirely on the individual OC too, but it takes a certain type of person who do what the Hunter does and keep doing it.

Today's thoughts; how the Wilds makes clear that not only is your Hunter a veteran - with implications that they wander and rarely do group assignments and that they even have knowledge of Fatalis and the likes - but that you are the threat.
In some other games you blatantly start as a novice with very little experience, who is knocked around by the flagship monster. Not here. At every turn your Hunter meets the challenge head on - and not only that, but you very specifically need to get the okay from Alma as a Guild rep to hunt.
At no point I can remember does your Hunter not instantly step in to help or fight.
