Playing this game has now been added to my bucket list

Yeah, I feel like it's something we took for granted back then, probably cause we never considered things would get so limited. It might have something to do with the mentality around fighting game development nowadays. They used to be complete packages that could maybe get an updated release or sequel or two, but now DLC is a major factor along with patching and netplay maintenance. I guess at some point publishers realized they could just use already popular games as templates there's no reason for the developers to try to be too different every time. New games are a gamble in terms of investment, I'd say, so companies aren't going to sign off an adaptation nowadays unless it's cheap or using a gameplay model they know can appeal to the general audience who are fans of whatever label they're using. So we get less despite there being more series to use.
