The Philippines' National Dish
Kare-Kare is a traditional Filipino stew widely recognized as one of the country’s national dishes. It is a savory and flavorful dish made with oxtail, tripe, and vegetables such as eggplant, string beans, and banana heart, all cooked in a rich peanut sauce. Condiments and other flavorings are usually added. It is often eaten with bagoong (shrimp paste), sometimes spiced with chili, ginisang bagoong (spiced and sautéed shrimp paste), and sprinkled with calamansi juice. Other seasonings are added at the table.
Traditionally, any Filipino fiesta is not complete without kare-kare.

Kare-kare's history as a Filipino food goes back centuries. There are four stories as to the origins of kare-kare.
The first one is that it came from Pampanga, the province which became known all over the country as the "culinary capital of the Philippines". The Kapampangan people often have a reputation for cooking to their hearts' content and coming up with deliciously rich fare.
The second is that the dish, specifically the sauce, from the galleon ships of Acapulco. Its key ingredient, the mani or peanut, was widely transported in it just like corn, also from the Aztec Empire and from a distant land. The only difference is the type of pork part. In Mexico it is the loin/ Lomo or Maciza. In the Philippines, it is the pork tail or oxtail. The word "Kare-Kare" is supposedly a diminutive of "Cari" which was a term to denote "golden brown".
The third comes from the regal dishes of the Moro elite who settled in Manila before the Spanish arrival. In Sulu and Tawi-Tawi, kare-kare remains a popular dish).
The fourth story is from Indian sepoys from Southern India that settled in Philippines during the British occupation of Manila, they improvised their own cuisine with available materials. They called it kari-kaari, curry, and now, kare-kare. Its name derived from a reduplication of Tamil: romanized: kari, 'curry; thick sauce'. Kare-kare has a similar flavor to satay because of the peanuts in the sauce.
In the Philippines, if something is particularly good or desirable, it's common practice to say its name twice, so since "kare" means "curry," you could say that a loose translation of kare-kare is "really good curry."
Kare-Kare’s popularity has steadily increased in recent years, with the dish gaining a following beyond the Philippines. One reason is the growing interest in international cuisine, with more people seeking authentic dishes from different cultures.

Childhood Realization of Richard Galoso
A few years back, there was a boy who loves to play in the streets, a boy who never gets tired of mingling with other people outside of his home. A boy named Richard Galoso was a cheerful and energetic kid. He was born in July 31, 2005 in Tondo, Manila. One thing he never forgets during his childhood days was when every afternoon his parents forced him to sleep so that he could play outside after he wake up. And then one day, his father lost his wallet unconsciously and all of their money was in there. They had no food in the table and no money to spend. Richard had no choice but to stand up and look for ways to earn a little bit of money just to buy something for his family to eat. He sold coppers or anything else just enough to buy something to eat.
Then his oldest brother decided to live separately with his own family, he was left heartbroken since he was very close with his nephew. That was the time when he become a lot more matured since he was kind of the breadwinner of the family. He started to look for possible sidelines just to earn money to shoulder a little bit of their daily expenses. And because of that, he got the opportunity to travel to different places and met a lot of new people.
And as he grew older into an adolescent, he realized how the cost of living is extremely increasing each day but Richard didn't hesitate to stop working, instead, whenever he has a free time since he's also studying, he looks for an open sideline to earn money as well. He was becoming a lot more better each day, a lot of people looked up to him especially his family, because of his determination and dedication to help himself and his family. And despite having such an unprivileged lifestyle, it didn't become a hinder for him to grow and mature in a positive way.
