Answering your questions with more of my amazing headcanon and some fun history knowlage lmao.

okay so I think Davey's hand writing would be similar for both of his hands. That's how it makes sense since he was basically using his right hand most of his life.

But they do notice when he involuntary starts using a spoon/fork with his left hand. That happents when they're at Jacobi's and eating lunch together. Davey never really had to use right hand for eating because he didn't do it in public most of the time and his family is mostly left handed too (on his mom's side.)

So at first the boys are suprised because hey only ever saw him use his right hand. And they basically would ask if it's comfortable and if he always uses his left hand and then he'd say that it is in fact more comfortable then using his right hand and they'd ask if he could write ale draw with it and Davey would admit he could and they just find it really cool.

In canon most newsies don't go to school so some of them are left handed too but didn't realise the bias around it was so big. And since then Davey just uses his left hand for writing etc around newsies and joins the lefties forces with Race.

TLDR:

They find out because Davey uses silverware with left hand. They're suprised because they never noticed he's left handed but generally just chill and honestly they think it's awesome that he can write with both hands. Some of the newsies are left handed too so that's a big plus for Davey + they help him feel better about it since he was always made fun of at school

Adding on because I have this stuck in my head every time I stumble upon my own post. He'd probably get his hands smacked with a ruler if he ever used his left hand for writing. Or he'd even have it strapped to the back of his chair (REASERCH IT THIS ISN'T A JOKE WTF) and I just know he'd hate being left handed so much he put extra effort into not using that hand. And the newsies would be absolutely shocked when they found out (probably including Les since Davey just tried to get himself to be full on right handed)
