Courgettes and Lemon Pappardelle with Pine Nuts. 9/10
Recipe at: Vegan Life, April.
If you know your pastas well youโll probably be able to tell I didnโt use pappardelle but tagliatelle instead; the local supermarket didnโt have any.. BUT it was still great ๐! The fresh lemon juice was soaked up by the courgettes giving the pasta its unique flavour. I would definitely recommend adding some heat to this dish (maybe green chilly/ red chilly flakes/ paprika?) as it was the only thing I felt was lacking ๐.

One-Pot Curry Risotto. 10/10 Recipe at: Cook Vegan, May. A beautifully simple and tasty recipe by Jessica Jones and Wendy Lopez @foodheavenshow featured in Cook Vegan. The cayenne pepper was a great touch at the end as it gave the rice a perfect kick of heat.

Slovenia ๐ธ๐ฎ, ฤrna prst
Here is just a snapshot of my holiday in Slovenia. I knew very little about Slovenia until I met my very good friend Melita. She introduced me to the breathtaking country which is filled with incredible mountains wherever you turn, fairytale like places and people who are so selfless and kind that make you make youโre making a terrible mistake by leaving the country as life will never be the same!! Fact.
Hiking ฤrna prst was a real challenge for me as Iโm not a hiker but I loved every second! I managed to break some tough hiking sticks which shows my determination (or my inability to use them correctly.. ? Hm ๐ค). We so nearly made it to the top (!) but sadly the weather was against usโฆ nothing do do with our speed. Honest. Until the next visit! ๐๐

Caramelised Shallot Tarts. 9/10 Recipe at: Cook Vegan. April 2017
Wow! Using Jus-Roll puff pasty is so easy ๐ฎ Super exciting to someone who has never used it before ๐ฏ. The shallots took 10-12mins. to caramelise but after that the oven did most of the work. Tip: A great recipe to use for finger food at a party; just use the 5cm cutter for the circles instead of the 10cm ๐

๐๐ฅ8/10 Recipe at: Cook Vegan, April New magazine arrived today, full of new recipes! Yay! ๐๐ค The ratatouille is a super simple weekday dish. It took me less than 5 minutes to prepare and I literally chucked everything together in a pan and let it cook ๐

Rustic Aubergines with Tahini Sauce ๐. 6/10 Recipe at: Cook Vegan, March. A super easy recipe if you're having one of those days where you don't feel like cooking ๐. The aubergines were in the oven for an hour and the sauce took under 5 minute to prepare. However, you may want to try another recipe if you're not a fan of aubergines as it has a strong flavour ๐๐.

Chocolate Pecan Pie Raw Cheesecake. 5/10 Recipe at: Cook Vegan, March 2017 This was a fun recipe to make as I've never made cheesecake before ๐ฎ๐. The base was dense and full of flavour, which was perfect, but the filling had a slightly odd taste and texture. I would definitely like to experiment with other cheesecake recipes to find one that I like โค๏ธ๐.

Macaroni Cheese. 6/10 Recipe at: Cook Vegan, March 2017 Macaroni cheese is one of my favorite meals as I never really had it as a child and loved it as an adult. I was hoping to be impressed with this recipe but it lacked in flavour ๐. However, the paprika did it wonders ๐! Something I will use with other recipes.

Simple Strawberry Galette. 9/10 Recipe at: The New Vegan by รine Carlin This is a beautiful, luscious looking, dessert once baked which tastes just as good as it looks. The juices from the strawberries just ooze out in the oven which fills the pastry with lots of flavour. Double the ingredients if you want it to be enough for 4 people ๐๐.

They were extremely rich and tasted very 'peanut buttery' - not necessarily a bad thing, just depends on your taste buds ๐. I've discovered there are countless different ways to make truffles. Banana Pancakes with Blueberries and Maple Syrup. 10/10 Recipe at: https://veganuary.com/recipes/banana-pancakes-with-blueberries-maple-syrup/. Something you should note: My desserts and sweet treats will always be rated higher โฌ๏ธ than my mains as I enjoy these more - so my ratings are a little biased (!)๐๐. It was a perfect start to the day with these delicious pancakes ๐. Quick and easy. Top tip: keep the heat on low/medium or they will burn very quickly ๐. Lesson learnt!

I absolutely loved making these. Itโs made from all raw ingredients which means no baking was required! ๐ค I couldnโt find any walnuts so I substituted it with pecans; however, I recommend using walnuts if you have any as they have less fats and are full of healthy oils โค๏ธ๐

Sweet and Sour Tofu with Edamame Noodles. 9/10 Recipe at: https://veganuary.com/recipes/sweet-and-sour-tofu-with-edamame-noodles/ I felt a Chinese dish was appropriate for Chinese New Years! I've realised tofu can be super delicious when it's baked in the oven first ๐- it was tender on the inside with a slightly crispier texture on the outside. The sauce made from medjool dates finished it off nicely! ๐

The โTofu Chorizoโ is what caught my attention when looking for something to cook ๐. The marinated and then cooked tofu gave a light flavor in the end; this worked well with all the other ingredients. Donโt forget to squeeze some fresh lemon on at the end ๐!

Nutty mushroom and coriander pilaf. 7/10 Recipe at: https://veganuary.com/recipes/nutty-mushroo-and-coriander-pilaf/ The toasted pine nuts were great in this recipe! I just needed to add a little bit more water next time as the suggested 450ml was not enough - I was left with undercooked rice ๐๐. Also, this was my first time cooking brown rice; it takes forever!! ๐ฎ Should I use high heat? ๐ค
