08.02.17 Today, me and my partner made pizza and brownies. I can make raisin bread and a savoury bread pudding with assorted vegetables like mushrooms, bell peppers and onions with the basic bread recipe.

Today, my partner and I made fruit tarts and tuna quiche. The pastry base for both the dishes we made were made from scratch so it is definitely a healthy option. 
However, the tuna we used is not very healthy because it was canned tuna so there were lesser vitamins in it compared to the fresh ones. Hence, I will be suggesting two other healthier options for the filling of the quiche
1. Chicken Breast 
Chicken breast is a healthier option than canned tuna because compared to canned tuna, chicken breast has lesser calories. Furthermore, the amount of total fat and saturated fat is lower in comparison

2. Tofu
Another great substitute for canned tuna is tofu. Tofu is a really healthy option as it is really low in calories and relatively low in saturated fat too. It also has a great taste so when making a quiche, people wouldn’t mind using tofu as it is healthy and delicious.

I didn’t manage to go to the supermarket this week so I used the spring roll pastry as an example which I found in the fairprice website.
I went to a website to compare the nutrition between handmade pastry and store-bought pastry and I realised that the store bought ones are actually healthier because they contain 3 times lesser fats than the handmade ones. They also contain lesser sugar and salt content in it so it becomes a healthier choice. 
That’s why in my opinion, I think I would use store bought pastry because it is healthier based on nutritional value.

Today, we made Chicken Lasagna and Chocolate Pudding with Custard sauce. My partner made the lasagna and I made the chocolate pudding and Mrs Abbas made the custard sauce.
Based on a custard sauce nutritional value table I found online, I have come to know that there is a significant amount of cholesterol in it. Cholesterol is not very good for your health as high levels of it may cause you to get a form of heart disease. Here are 2 healthier substitutes for custard sauce.
1. Apple Sauce With No Sugar
Apple sauce is a healthy replacement for custard sauce as it contains about thrice lesser the amount of calories as custard sauce does. Also, based on the tables above, thee is lesser sodium in apple sauce which is good. Too much sodium in our diets may cause high blood pressure. Hence, this is a great substitute for custard sauce.
2. Raspberry Sauce
Raspberry sauce is also a great substitute for custard sauce. The ingredients used are fresh raspberries, water, orange juice, sugar and cornstarch. These ingredients are far healthier than the ones used for the custard sauce because there are lesser unhealthy ingredients in this. Moreover, raspberries are naturally sweet so we can cut down on the sugar to make it healthier. This makes it another great substitute for custard sauce.

For this lesson, we learnt how to make Nestum chocolate chip cookies and cupcakes! 
In the first picture, the cupcake on the left is Mrs. William’s ones and the one in the right is ours. The difference between both the cupcakes is that Mrs. William used 50g of butter while Shanmathi and I used 75g of butter so there is more fat in our cupcake. I could taste the difference in both the cupcakes because the one with more butter definitely tasted better and was more dense. The other cupcake was very crumbly and i couldn’t quite eat it properly. However, it is very obvious that Mrs. William’s cupcakes were much healthier. 
Here are some ways you can make the cupcake healthier
1. Mashed avocadoes are a great substitute for butter. They are tasteless so it will not affect the taste of the cupcakes. Moreover, it has up to three times lesser fat than butter and no cholesterol which makes it really healthy.
2. Instead of using all purpose flour, 1 part whole wheat flour and 2 parts all purpose flour can be used. The amount of dietary fibre in whole wheat flour is much more than in all purpose flour which makes it a healthier substitute.
3. Instead of using chocolate rice, we could use nuts. They have unsaturated fat which is also known as “healthy” fat so they make your cupcakes healthier and there will also be lesser sugar content without the chocolate rice.

Hey! This is my first post and I will be posting every week on what my partner (Shnamathi) and I have made. Last week, we made four simple food items. My partner and I tried our level best to make it as healthy and as tasty as possible. We made grilled chicken drumlets, chicken flavoured rice, stir fried vegetables and konniyaku jelly for dessert!
Firstly, Shanmathi started by cleaning the rice and adding the chopped garlic and chicken broth to it. She then let it cook in the rice cooker for an hour. Meanwhile, I started to make the jelly mixture (it was a really perspiring 5-7 minutes) Shanmathi and I decided to add less sugar to the jelly because we knew that the canned fruit already has high contents of sugar. Once the mixture started to boil, I poured it into the moulds which was already filled with the canned fruits and let it cool.
Then, I started to chop up the vegetables needed for the stir-fry while Shanmathi added the sauces for the chicken marinade and “massaged” the chicken drumlets. She let it marinate for awhile before letting them grill in the oven because we wanted it to be more flavourful. Next, she placed the cooled jelly tray into the fridge while I started frying the vegetables. I accidentally added extra oil to the pan so the vegetables turned out a bit too oily. For extra flavour, I also added the leftover marinade (with some water) into the vegetables. 
Soon, the rice was done, the vegetables were fried, the jelly was set. However, our chicken drumlets were still not cooked well enough. We had to wait till the last minute till it was done. The jelly and vegetables tasted delicious! I personally felt we could have added lesser rice and more chicken stock to our rice because it wasn’t as flavourful as I expected it to be. The chicken drumlets tasted really good but I think we should have added lesser sauce to it. Overall, this was a new, enjoyable experience but I feel that the meal itself could’ve been healthier. I would rate this meal a 7/10. I really hope the next time I cook a meal like this, I would make it more balanced.
