You can just mix some flour and water so that it has the same consistency (or a little thicker) than an egg, and use that to coat your zucchini! I also missed my fried eggplant bites I used to make (also with egg), but once I found this replacement I could make it again! Egg is so overrated, considering it is the one thing that so many people see as difficult to substitute ("Oh I used to love to bake, but now without eggs I can do it as much." me, 2.5 years ago, a few months after going vegan).
