Today I made my favorite “Makluba” meaning “upside down”. I like to make it like an upside down cake. It is a cake made of rice, chicken and vegetables such as: eggplant, carrots, potatoes, and cauliflower. It take about two hours to prepare and another two hours to be cooked. It is a dish with a whole bunch of different spices and is very flavorful. The bottom gets very crispy and when flipped becomes the top. It’s garnished with fried almonds. Sweets!!!! Yum, yum!!!! My friend had a birthday dinner, she baked the cakes from scratch and I made chocolate French macarons.... omg!!! It was amazing!! She did a Neapolitan ice cream theme, and everything tasted like ice cream!! This is for ice cream lovers!! 💕 As for the French macaron they tasted like brownie bites, they were crispy and chewy at the same time... funny right ?? It was well complimented by real ice cream and cupcakes!!! Today i made stuffed zucchini with yogurt also known as (Kousa bi leban). This is a Mediterranean dish, zucchinis are stuffed with ground beef, rice and a variety of spices. It is submerged in a garlic yogurt sauce and poured on top of a turmeric rice pilaf. To garnish, parsley and toasted pine nuts. I love the meaty zucchini and is very well complimented by the sourness of the yogurt.
