Grass-fed Chopped Steak, with mushrooms and onions (all ingredients, all organic, all the time). Just seasoned the meat with some black pepper, garlic powder, and onion powder. Like a big ol’ hamburger, cooked to a perfect medium rare, with a mouth watering char on top and bottom from the cast iron skillet. Ugga-Bugga! Caveman like!
I’m trying out beef from a new farmers market, so I wanted to really taste it, so I prepared it without too much fuss. If you’re in Southern California, check out Novy Ranches. They are local, and sell completely grass-fed beef. The rancher told me that a lot of grass-fed ranchers are trying to get away with a new wrinkle in how to screw customers. There’s grass-fed, and then there’s grass-finished (meaning, some ranchers feed their cattle grains in the last few weeks of their life to fatten them up slightly), but now some are bypassing that warning label, by starting the cows on grass, then in the middle fatten them up on grain, and then finish with grass for a few weeks so they can still claim “grass-finished." You gotta watch these people like hawks!
The only way around it is to ask questions! Go to the farmers market and ask about everything! Your meat, your eggs, your produce, etc! In my experience, if your farmer has nothing to hide, they LOVE to talk about their food, and they will volunteer full disclosure, and never tire of your questions. Those that brush you off, give you one word answers, don’t look you in the eye, or are vague with their answers, making you ask more and more until the truth comes out… they are the farmers not to be trusted, and you should move on. And don’t get hung up on the Certified Organic label. The government makes farmers jump through hoops to get that certification, and still makes allowances for some pesticides. It’s teh farmers that volunteer to grow food organically, without the certification that I usually wind up trusting the most. And the only way to gain that trust is to ask questions!
Anyway, this beef tasted pretty amazing, and local definitely makes a difference! Novy Ranches are gonna be one of my trusted farmers from now on.
