Our reactions tell the (w)hole story. (like bagels have holes, ya know its clever just giggle) It tasted great! The bagels had a nice crisp outside with a softer chewy inside, and the homemade everything bagel seasoning tasted fantastic. It's oniony garlicy goodness meshed super well with the cream cheese and the whole thing turned out wonderful!!!

A slice into one of the everything bagels reveals a nice crumb! looks all good on the inside, then we loaded it up with cream cheese and took a big bite!

And after leaving these babies in a hot oven (375F) for around half an hour, we turned em into beauties! The egg wash did wonders for the color of the bagels, especially that plain bagel which looks absolutely golden.
And yeah we got Sohla cookin on the TV!! What of it!! We love that creative girl!

After lettin the bagels boil for 3 mins on each side, we took those things outta the pot, and we hit those bad boys with a quick egg wash before dunkin em all round in that seasoning. mmmm gets me excited just thinkin about it.
We decided to put the Everything bagel seasoning on 3 of bagels, a little combo of sesame seeds and salt on 2 of em, and then we left one plain.

The two of us were really craving some everything bagels, and we wish we had the "Everything but the Bagel" Trader Joe's seasoning!! But we had to make our own instead. Still, we were a little cheeky in using the Trader Joe's Everyday Seasoning. In there we put some onion powder, garlic powder, sesame seeds, salt, coriander, mustard seeds, black pepper, paprika, and just a little bit of chili pepper. The flavor profile matched exactly to Everything bagel seasoning, and we were so surprised by how easy it was to make!

Then we put those things in some boiling water!!! Following the recipe, we put in like a tablespoon of sugar to dissolve in there as well. You can really taste it in the bagel! That little sweetness is so nice

We then let the dough rise for around 15 minutes before returning to it and punchin some crazy holes in the middle!! We forgot to film this part :( because we were literally having so much fun
but the process entails poking your index finger straight down the middle until you puncture the bottom, then you take your other index finger and put it in the hole and you spin the dough round your fingers until the hole gets bigger and the bagel's a good size!
Here are our six perfect bagels, the most brilliant half-dozen there is, and we let them rest for another 20 mins.

Here's what the texture started changing into! The dough became nice and "smooth and elastic", just as the recipe says it should. My partner added a few action shots and some narration to break up the repetitive kneading...and it was awesome!!

Then I went ahead and kneaded the dough for around 10 mins. We weren't too happy with the consistency at that point, so we added just a bit more water so it could come together a little more.

Here we started mixing the dough! Even though this recipe just tells you to use a mixer, tons of other bagel recipes online say to use your hands! They say don't be afraid to get in there!! I ended up riffing a little improv too just to fill the silence lol.

To start it off, we actually messed up a little bit...We began to bloom the yeast with some sugar and warm water before mixing it into the dry ingredients, but the recipe calls for it to just be mixed in dry. I don't think it really changed that much? Other than the bagels being perhaps a smidge chewier than they were supposed to? But hey whatever I like that chewy bread.
Also! This recipe makes a dozen bagels, but we halved it just because we didn't want that many bagels right then. We put in the flour sugar and salt, and lightly dusted our work surface with flour.

All-Purpose Flour Recipe!
Most recipes for bagels call for bread flour, but that was kind of hard for me to find! I used a recipe that uses all-purpose flour instead, and the only thing that's lost is that the chew is just a bit different. The end product still tasted pretty good!
