Honestly the fshepard garrus romance really feels the most organic and real to me because of how symbiotic it really is. It becomes really apparent they both rely on each other at points. Garrus really goes from needing a morality check to being the morality check over the course of the games.
I also really enjoy the fact that the relationship essentially opens with them going to a ‘friends with benefits’ dynamic and never actually is that. The relationship is always emotional support first and the rest comes very secondarily.
They also have such a pre-existing dynamic that the romance only builds upon that and doesn’t actually change it as its core.

there's something about garrus and shepard admitting to each other that the worst thing about the end of the world would've been facing it apart. they've been to hell and back, they know there's nothing they can't do together. in the first conversation back on the normandy, garrus says "if this ends with us dying in a giant explosion taking out a reaper, remember that i took the killshot." even if they die, it's obviously going to be together. where else would either of them be?
he tells her he always knew he'd see the normandy again. his faith never wavers. if anyone can do this it's her. and he's got her back. no matter what. no shepard without vakarian, all the way back to earth, all the way through london. and then at the last possible moment, they get separated and have to face the end of the war alone. stranded lightyears apart, no way to know if the other survived.
but they both do and after a lot of recovery and probably some therapy they retire somewhere warm and tropical where they can enjoy their lives together in peace :)

the problem with Mary Sue discourse nowadays is that it's being mostly led by male geek bros with no emotional intelligence who don't get that personality flaws can count as character weakness. they'll call a female character too flawless for being skilled and taking down enemies easily and in the same breath call her whiny or cold or selfish or brash or ruthless or arrogant or amoral with no consideration on whether this very trait causes unwanted consequences for her and is what holds her down. they conceptualize character arcs as a series of power ups leading to a final form as if the character is some sort of pokémon, no need of introspection except for the generic "become more resilient and rise up to claim the power the rightfully belongs to you" or something.
