Katherine of Aragon had a significant influence on Tudor cuisine, particularly through her preference for Spanish dishes and her introduction of new ingredients and culinary techniques. Her fondness for Seville oranges led to the preparation of orange marmalade, which was made in thick, leathery slices.

Katherine's preference for salads, or "sallets" as they were known, contributed to the growing popularity of this dish in Tudor England. She employed a Dutch gardener to cultivate the herbs and vegetables she enjoyed.
