Starting today I’ll be sharing 14 delicious recipes with portobello mushrooms, which is a great and delicious idea on keto diets! Hope you enjoyšŸ¤¤ā¤ļø
Caprese Stuffed Garlic Butter Portobellos
IngredientsšŸŽ:
Garlic butter
2 tablespoons butter
2 cloves garlic , crushed
1 tablespoon freshly chopped parsley
Mushrooms:
5-6 large Portobello Mushrooms , stem removed, washed and dried thoroughly with a paper towel
5-6 fresh mozzarella cheese balls , sliced thinly
1 cup grape (or cherry) tomatoes, sliced thinly
fresh basil , shredded to garnish
Balsamic Glaze: (or you can use store bought, or this recipe)
¼ cup balsamic vinegar
2 teaspoons brown sugar (OPTIONAL)
PrepšŸ‘©šŸ»ā€šŸ³:
Preheat oven to grill/broil settings on high heat. Arrange oven shelf to the middle of your oven.
Combine all of the Garlic Butter ingredients together in a small saucepan (or microwave safe bowl), and melt until garlic is fragrant. Brush the bottoms of each mushroom and place them, buttered side down, on a baking tray.
Flip and brush any remaining garlic over the insides of each cap. Fill each mushroom with the mozzarella slices and tomatoes, and grill/broil until cheese has melted and golden in colour (about 8 minutes).
To serve, top with the basil, drizzle with the balsamic glaze and sprinkle with salt to taste.
For the Balsamic Glaze:
(If making from scratch, prepare while mushrooms are in the oven.) Combine sugar (if using) and vinegar in a small saucepan over high heat and bring to the boil. Reduce heat to low; allow to simmer for 5-8 minutes or until mixture has thickened and reduced to a glaze. (If not using sugar, allow to reduce for 12-15 minutes on low heat).

Keto, Whole30, Vegan Overnight ā€œOatsā€

Ingredients
Vanilla Keto Overnight Oats
ā…” cup full-fat coconut milk, plus more for the following day (can swap with any non-dairyĀ ā€˜milk’)
½ cup Manitoba Harvest Hemp Hearts
1 tablespoon chia seed
2 teaspoons confectioners’ erythritol or 3 to 4 drops of liquid stevia (omit for Whole30)
½ teaspoon vanilla extract
pinch finely ground Himalayan rock salt
Optional Toppings
12 whole almonds (omit for nut free)
6 whole raspberries
Instructions
Add all ingredients to a 12 fl. oz, or larger container with a lid. Stir until combined. Cover and set in the fridge overnight, for at least 8 hours.
The following day, add additional milk until desired consistency is reached.
Divide between two small bowls, add toppings if desired, and enjoy.
Macros (with no optional toppings)
290 calories - 23g of fat - 1 net carb - 15g protein
Additional Flavor Variations

Keto Fudge Overnight ā€œOatsā€. In addition to the ingredients in the Vanilla version above, add 2 tablespoons of cacao powder and 1 tablespoon of sunflower butter. Follow the same instructions as above. Optional toppings include shredded unsweetened coconut, cacao nibs, and strawberries.
Keto Pumpkin Spice Latte Overnight ā€œOatsā€. Omit ā…“ cup (80 ml) of the coconut milk from the vanilla version and replace with ā…“ cup (80 ml) brewed coffee (decaf or regular). In addition to the ingredients above, add 2 tablespoons of canned pumpkin puree, and ¾ teaspoon pumpkin pie spice (or ½ teaspoon ground cinnamon, ¼ teaspoon ground nutmeg, and ā…› teaspoon ground cloves). Follow the same instructions as above. Optional toppings include pecans, and ground cinnamon.

I love love love this dill cucumber salad inspired by the local Hungarian restaurant. Topped with sour cream and paprika.
The fat and protein intensity of the keto diet is good and all, but I do love to break it up with fresh things!

We had an eggplant and it needed to be cooked. I was also in the mood to try something different-Welcome the birth of the Eggplant Lasagna Tower.
Ingredients: *1 Eggplant, Peeled and Sliced about ¼ inch thick *4 eggs Beat *Grated Parmesan Cheese *2 Tablespoons each of Oregano, Onion Powder, Salt, Red Pepper Flakes, Italian Seasonings, Adobo Light, and Black Pepper *Trader Joes Rustico Sauce, or other low carb Marinara *2 Tablespoons Butter *½ Cup Heavy Cream *3 Cloves Garlic, Minced *2 Cups Half and Half *1 Cup Shredded Mozzarella
Instructions: *Preheat Oven to 375F. *In a bowl place the beaten eggs. In another bowl add the parmesan and all spices. *Take an eggplant slice and cover with the parmesan cheese, then dip it in the eggs, then back in the parmesan cheese. *Place that slice on a baking sheet covered in parchment paper. *Repeat for all the slices. *Bake the eggplant for 20 minutes, if needed flip halfway through. *While the eggplant is cooking make the cheese sauce. *In a large saucepan on med-high heat, place 2 tablespoons butter and minced garlic and melt. *Add In half and half and heavy cream and bring to a soft boil. *Add In Mozzarella cheese, lower to medium-high heat and stir constantly. Once the cheese is melted turn to medium heat and let it simmer, stirring every few minutes. *While the cheese sauce is simmering heat up the tomato sauce. *Once the eggplant is done take a large slice and place it on a plate. Add a spoonful of marinara, and then a spoonful of cheese sauce. Repeat for how high you want it. End with some more marinara and cheese sauce on top. *Repeat for how ever many towers you need. *Enjoy!
Kevin really enjoyed this recipe and I enjoyed that it was lower in carbs. Please be aware that Eggplant isn’t completely low carb, just lowER carb, so I made my tower smaller with the smaller pieces.
