So, sometimes you just want something snacky available, just in case. I've never been a big potato chip person, but I'm pretty dangerous around tortilla chips and queso. Fortunately, mission makes low carb tortillas in three sizes: 3c per tortilla, 4c, and 6c. I usually get the 4c for tacos and burritos and the 3c for these. They're really easy. Time consuming, but easy. Cut each tortilla into 8 triangles, arrange on cookie sheet, spray with cooking spray and sprinkle with salt, bake at 350° for 7 minutes, turn over and spray and salt the other side, bake for another 5 minutes. Serve with your favorite low carb salsa or queso. This would be great for any snacky event you have coming up like, oh, that big sportsball thing people get all excited about and have parties for. #keto #tortillachips #missiontortillas #yummy #foodprep

Lunch for this week: pigs in a blanket and smashed Brussels sprouts. Piggies were easy: wrap little smokies in stromboli mozzarella dough (link below) and I made them in a little cooker made specifically to cook pigs in a blanket that my aunt has. Smashed Brussels sprouts have a bit of a story with them: they've always been on my eeeeew list. You know the one. The foods you refuse to eat because yuck. Well, a couple of months ago my family and I had lunch with an aunt and uncle that are also keto (hi guys!). They ordered these grilled Brussels sprouts that were seriously good. I was shocked. So, when I saw this delish recipe on Facebook I wanted to try it. They're really good. Better than sweet potato casserole. I made this for my department thanksgiving lunch, using them as ginuea pigs before I make it for the real holiday. (It should be said that none of them mind. I think they look forward to it at this point.) Extra food stuff because I had a craving. I made nothing sweet this week that I could actually consume to handle any sweet cravings that pop up. The pie I made yesterday for the lodge pretty much disappeared like it was magically conjured away. So, that's a plus. But, it left me without anything sweet.
