i was painting smth thats supposed to be quick for a tutorial except painting them little flowers are a pain apparently

i really love your art (really nice lighting n colours!!) and enjoy your process videos!! i wanted to ask if you could explain how you sketch/doodle in grayscale and then add colours afterwards - i haven't seen that process before, but im so curious about how it works. I've definitely heard of art advice on working in greyscale before adding colour bc it helps define values better, but I'm lost on how you apply colour - do you use layers or turn down the opacity of the greyscale sketch and colour over/under it etc? thank u for sharing your art!!
