When I joined the #vegang, I wanted to stop feeding into cruelty. I didn't want to give up the types of food I loved. Dishes like mac & cheese and smoked BBQ were some of my all time comfort food favs. Hence, I went on a mission to recreate plant based versions that don't compromise on flavour. Try our homemade Cashew Mature Cheddar mac n cheeze and BBQ chopped brizket and judge for yourself!

Anybody ever tried #Injera before? It is an East African wrap made from a grain called #Teff. In Middle Eastern culture we soak teff in water and consume it in a drink for its probotic properties. However, East African cusine use it as a staple instead of rice or bread. It is a lower calorie and carb alternative to wheat flour products and has countless other health benefits. It is also much more alkaline than wheat flour dishes. The teff grain is also fermented, which creates a lot of healthy enzymes to help the digestive system. This does give it a sour note to the Injera (much like our fermented cashew cheeze). It's not the easiest thing to make and can take a couple of days with the fermentation process. Ethnic supermarkets with Ethiopian/Eriterian products tend to stock them as well as East African resturants tend to sell them. I served mine with spiced lentils, sauteed spinach with garlic, aubergine in tomato sauce and chickpea & peppers. Not all traditional dishes as I added the Lazyboy fusion.

Reducing waste is an important part of veganism. In our strive to reduce animal suffering, we must be aware of the damage our 'single-use' lifestyle is having on the ecosystem. The amount of plastic found in wildlife stomachs in unpresidented. Being a street-food stall, we inevitably generate lots of rubbish. At Lazyboy, we do our best to use bio-degradable packaging and cutlery and avoid single use plastic where possible. However we are always wanting to support the many zero-waste samurai out there. As some of you may know, I come from an Iranian background. Whilst Lazyboy is a manifestation of my love for BBQ and Mac & Cheese, developed during my upbringing in U.S.A; Iranian cuisine has always been a daily part of my life. I have really wanted to share my vegan spins on Iranian classics with the #VEGANG community. Although I have been including some of it in my insta stories, @brixtonfoodfiend has helped inspire me to take this to the next level! So here is our first teaser of what @brixtonfoodfiend and I have been working on together. This is called #shividpolo which is basically fluffly steamed saffron basmati rice infused with dill and topped with Iran's greatest invention; bread #tadigh. Tadigh is a crispy treat made by adding a little bit of at the bottom of a rice pot, and cooked on a low heat. Keep an eye out on both out pages for more teasers!
