What it means:

Rolin's gonna have Louis and Armand spin Daniel on their disco sticks. Then Lestat comes in, swings on the chandelier, and flies away with Daniel, bye.

Theory:

The HalluciLestat part of Louis's subconscious tries to warn him about how much danger Claudia's really in when the bird crawls out of his throat.

Remember, he called Claudia "a bird" and he did in his way give birth to her (much like the neck birth going on here) so Louis's brain could conjure up the symbolism. I also think it could simply be a symbolism of "fledglings" (baby birds) coming out of his slit throat or "the birds speaking for him" but all three can be true as well.
