BLACK RICE PUDDING 🖤 have you ever tried it? I bought some black rice in Bali as a souvenir (I’m such a food nerd I always bring home half a suitcase of food from abroad😂) so I had to make something with it. 🍚
Black rice pudding is a big thing in Indonesia. 😋 It’s very filling and tasty without the need for a lot of spices. Black rice has a distinct strong flavour on its own already.
𝐑 𝐄 𝐂 𝐈 𝐏 𝐄:
300g full-fat coconut milk (+ more for serving)
2 cups water
1 cup black rice
1⁄4 tsp salt
1/2 tsp cinnamon
1⁄2 tsp ground cardamom
1 tbsp coconut sugar
Optional: Some dried or fresh pandan (I love the flavour of this plant so much)
𝐇 𝐎 𝐖 𝐓 𝐎:
Place all ingredients in a pot, bring to a boil, then reduce the temperature to low and simmer covered until the rice is tender and most of the liquid has been absorbed (60-70 minutes). Stir consistently. Serve with extra coconut milk, caramelised banana, coconut chips & mango cubes.

RECIPE:
2 frozen bananas
100g pumpkin purée
A generous splash of almond milk
1 tsp pumpkin spice
1 Tbs almond butter
Add all ingredients to a high-speed blender and pulse until smooth. Top with chocolate, chopped pecans, banana coins and @govindanatur Chufella (a healthier Nutella alternative).
