This Grilled Avocado and Peach Salsa is a vibrant and flavorful party appetizer that's perfect for any occasion. The combination of grilled avocado and peach adds a unique smoky sweetness to the salsa, while the fresh cilantro and lime juice brighten up the flavors. It's a healthy and delicious option that will impress your guests!
Ingredients: 2 ripe avocados, halved and pitted. 2 ripe peaches, halved and pitted. 1 red onion, thinly sliced. 1 jalapeno pepper, seeded and minced. 1/4 cup fresh cilantro, chopped. 2 tablespoons lime juice. 2 tablespoons extra virgin olive oil. Salt and pepper to taste.
Instructions: Grill at a medium-high temperature. Drizzle peach and avocado halves with extra virgin olive oil. Cut-side down, grill the avocado and peach halves for 34 minutes, or until lightly charred. Take out of the grill and give it a little chill. Chop the grilled peaches and avocado and transfer to a bowl. Add the lime juice, minced jalapeo, chopped cilantro, red onion slices, and salt and pepper to taste. Mix everything together gently until well combined. Serve right away or put in the fridge until you're ready to serve. Eat as a topping for grilled meats or with Paleo-friendly chips!
