Vegan (oil-free) strawberry cheesecake | Recipe from Lazy Cat Kitchen

Raw blueberry cheesecake :) 

Base:

½ cup raw pecans

½ cup almond flour

2 pitted Medjool dates

2 tbsp coconut oil

1 tsp cinnamon

¼ tsp salt

Filling:

2 cups raw cashews, soaked for a few hours

1 ½ cups blueberries, thawed, ½ cup raspberries, thawed

½ cup maple syrup

1 ½ tsp lemon juice

Instructions

   1.  Grease a 6” springform pan with coconut oil or line with parchment paper greased with coconut oil.

Add the base ingredients to a food processor or high-powered blender and mix until it forms a sticky dough. Press the dough evenly into the prepared pan.

Combine all of the filling ingredients except for the blueberries and blend until the mixture is silky smooth. Set aside a portion of this raspberry mixture for the raspberry swirl (about ½ cup). Add in blueberries and mix until smooth. Adjust sweetness/tartness/spice levels of the mixture to taste.

Pour the filling into the pan over the crust. Place in the freezer until completely firm. Swirl on top raspberry mixture then put it back in the freezer until this layer also becomes firm before serving. It helps to run your knife under hot water (then dry with a toilette) before cutting the cheesecake

Serve frozen or thawed at room temperature for 10-15 minutes before serving. Store in the freezer for up to 2 weeks!

Loneliness when surrounded by other people is more upsetting than loneliness by yourself. I would rather be by myself so I have a reason to feel so alone. But we can't always have what we want. It seems an unexpected dip in this pool called depression swept me off my feet and I can't swim. I can only reach for temporary distractions to help pull me out of a sand pit.
