Pumpkin Pie overnight oats 😍🥧
I know it looks gross, but this is the best overnight oats recipe I’ve put together in a long time.
21g protein/95g carbs/20g fat
Mix together 1c old fashioned oats, 1.5c unsweetened vanilla almond milk, 3T chia seeds, 1/3c pumpkin purée, 1T maple syrup, a tiny dash of vanilla extract, and 1/2tsp pumpkin pie spice. Mix it up a few times over five minutes or so to make sure the chia seeds don’t end up clumping together. Then put it in the fridge overnight and it’s ready to eat for breakfast!
