I positively adore how both Mina and Jonathan think of each other in their journal/letters. Distance may separate them, but they are always on each other’s minds. A recipe for her, practice for him. To be of use to the other. To capture what the other isn’t experiencing. A point of connection for the two who are so far apart. A way of saying that the world is beautiful and fascinating and I want to share it with you

I know everyone is talking about the mirror incident and about Jonathan Harker going "how I will shave now", but it feels like we are ignoring the fact that he had a full-blown panic attack? Because he very much had a panic attack. That's a pretty significant thing that happened. He realized he's a prisoner, started trying every door in the castle, and dropped while muttering "Doors, doors everywhere, all of them locked and bolted"...
He even compared himself to a panicked rat.

When Jonathan mentioned how he was only sleeping for a few hours, being suddenly awake, then that he was talking to the Count from midnight until the first morning. His first paragraph makes more sense.
I began to fear as I wrote in this book that I was getting too diffuse; but now I am glad that I went into detail from the first, for there is something so strange about this place and all in it that I cannot but feel uneasy.
Jonathan calls it uneasy to mask his own terrified explanation less he goes into a panic attack again, the narrative uses the word uneasy to build up the dissonant tension between what Jonathan describes and Dracula's actions. Specifically on the realm of how the Count is, according to Jonathan's perspective, "unintentionally" messing up his sleep schedule.
I think the majority here has gone at least a day without sleeping or sleeping badly, or has an altered sleep schedule that leaves them tired. Now, think about how Jonathan is now developing what seems to be initial insomnia symptoms with just what? Two days of stay in the castle? On top of all the mental stress he is shouldering after the revelation of being a prisoner inside the place of his employer.
These are the first moves that Dracula has done so far to mentally weaken Jonathan since the rosary doesn't let him attack him outright. Talking from midnight into the early morning, and leaving Jonathan alone are probably the methods Dracula has used for a long time.
But why focus on the sleeping? Why the beginning of imnsonia? Well, in the 19th century, and in the victorian era which brought the consequences of the industrial revolution, sleeping problems were already an anxious topic for the victorians. Since the transformation of their working conditions, inclusion of electricity, and what they called modern life more and more medical papers followed the trail of the "disease" of imnsonia developed by the middle class, and the working class. What was causing it how to prevent it, how to diagnose it, etc. Even moreso when apparently something called chloralism started to pop up from the abuse of chloral hydrate as a sleeping aid.
So, it's extremely topical for Jonathan to have his sleep altered like this since it's a very literal way to show how something very wrong is happening in this work trip, and how visibly Dracula is starting to wear him down.
