Whoah, take me home to my smoker! It is brisket time. Here is your smoked beef brisket tip of the day: be patient with it. Rub on a good binder and generously top that with your favorite spices. Let it sit overnight in your refrigerator.
In the morning, take it out of the fridge and let it warm to room temperature. Preheat the smoker, then put in the brisket. Expect a long cooking time! Easily an hour per pound or half kilogram, depending on the temperature you use.
Be aware that the temperature will plateau for a while. Be patient and let that internal water evaporate. Then the temperature will resume climbing. Monitor the internal meat temperature and let it get up above about 175 degrees F.
Whether to wrap it or not depends on your recipe. Sometimes you do; sometimes you don't.
After the brisket cooks, let it sit for al least an hour and maybe two to reabsorb those juices. And then comes the eating :-)

Knowing that plenty of other people also don't like mold and want to prevent it from ruining their food, making their refrigerator unsafe, or contaminating their homes, I wrote this to show how to get rid of mold and how to prevent mold from growing in the first place.
