A low-carb version of the classic mac and cheese, this keto-friendly cauliflower dish is creamy, cheesy, and satisfying without the guilt.
Ingredients: 1 medium head cauliflower, cut into florets. 1 cup heavy cream. 2 cups shredded sharp cheddar cheese. 2 tablespoons cream cheese. 1/4 teaspoon garlic powder. 1/4 teaspoon onion powder. Salt and pepper to taste. Chopped fresh parsley for garnish optional.
Instructions: Preheat your oven to 375F 190C. Steam or boil cauliflower florets until tender, about 5-7 minutes. Drain well. In a saucepan, heat the heavy cream over medium heat until simmering. Reduce heat to low and whisk in cream cheese until smooth. Stir in shredded cheddar cheese, garlic powder, onion powder, salt, and pepper until cheese is melted and sauce is smooth. Remove from heat and fold in cooked cauliflower until evenly coated. Transfer the cauliflower mixture to a greased baking dish. Bake for 15-20 minutes or until bubbly and golden on top. Garnish with chopped parsley if desired before serving.

Ingredients: 1 cup raw cashews. 2 cups water. 2 tablespoons maple syrup. 1 teaspoon vanilla extract. 1/2 teaspoon ground cinnamon. 1/4 teaspoon ground nutmeg. 1/4 teaspoon ground cardamom. 2 shots espresso or strong brewed coffee.
Instructions: Soak cashews in water overnight or for at least 4 hours. Drain and rinse the soaked cashews. In a blender, combine soaked cashews, water, maple syrup, vanilla extract, and spices. Blend on high speed until smooth and creamy, scraping down the sides as needed. Pour the cashew cream into an ice cube tray and freeze until solid. Once frozen, transfer the cashew cream cubes to a freezer bag for storage. To make the affogato, place 2-3 cashew cream cubes in a glass. Pour a shot of hot espresso or brewed coffee over the cashew cream cubes. Serve immediately and enjoy!

Ingredients: 1 cup all-purpose flour. 1/3 cup unsweetened cocoa powder. 1/2 cup granulated sugar. 1 tsp baking powder. 1/4 tsp baking soda. 1/4 tsp salt. 1/2 cup brewed coffee, cooled. 1/4 cup vegetable oil. 1 egg. 1/2 tsp peppermint extract. 1/2 cup semisweet chocolate chips. For the glaze:. 1/2 cup powdered sugar. 2 tbsp brewed coffee, cooled. 1/4 tsp peppermint extract. Crushed candy canes for topping optional.
Instructions: Grease a donut pan and preheat the oven to 350 degrees Fahrenheit 175 degrees Celsius. Mix the flour, sugar, baking soda, baking powder, and cocoa powder in a mixing bowl. The brewed coffee, egg, vegetable oil, and peppermint extract should all be combined in a separate bowl. Mixing until just combined, pour the wet ingredients into the dry ingredients. Add the chocolate chips and fold. Pour the batter into each donut hole, about two thirds full, using a spoon. A toothpick inserted into a donut should come out clean after baking for 12 to 15 minutes. Make the glaze while the donuts are baking. Blend powdered sugar, brewed coffee, and peppermint extract until a smooth consistency is achieved. When done, take the donuts out of the oven and allow them to cool in the pan for a few minutes before moving them to a wire rack to finish cooling. After the donuts cool fully, dip each one into the glaze, letting the excess fall off. If desired, add crushed candy canes to the top. Before serving, let the glaze settle for a few minutes. Instructions: Preheat your oven to 350F 175C. In a saucepan, melt the unsalted butter and brown sugar over medium heat. Stir until the sugar has dissolved and the mixture is smooth. Pour this caramel mixture into the bottom of a greased 9-inch round cake pan. Sprinkle the chopped rhubarb evenly over the caramel layer. In a mixing bowl, whisk together the gluten-free flour, granulated sugar, baking powder, baking soda, and salt. In another bowl, whisk together the eggs, buttermilk, vegetable oil, vanilla extract, and lemon zest. Pour the wet ingredients into the dry ingredients and stir until well combined.
