OKAYY how abouttt. how do you think they met?! since it's soooo Not touched upon in canon... at all.. i love thinking about anything pre-canon for that reason LOL it's just a playground. AND. AND. Ohhh that is a GOOD question. I've thought about this a bit too, though I haven't really had the chance to put it to paper before now...
Major SoJ spoilers again.
I've always enjoyed the headcanon that they met when Dhurke had to defend Datz in a trial in their early 20s. Knowing Datz, it's not exactly hard to believe that he'd find himself in the wrongly-accused hotseat à la Larry Butz. It could also definitely play into the idea that Datz spent (a short amount of) time in the military.
Edit: I have been made so confused about whether Khura'in has a functioning military or not, since characters in-game talk about the country's reliance on spirit mediums to keep peace. He's a former paratrooper according to his wiki, so it's what I'm going with for now.
Following that thread, I could see Datz getting a crime (murder, if we're going with that classic AA drama) pinned on him by one of his superiors. Going by vibes alone, I would guess that he's the type to be very good at his job on paper but an absolute pain to have as a subordinate - the perfect guy to blame to keep him from getting promoted upward. I'm hardly an expert in military law proceedings, but this also isn't a real country and I don't think it's too far of a stretch to say Dhurke could find himself defending someone during them despite not specializing in it.
So, let's say they're both around 21. Datz gets a murder pinned on him by someone that ranks above him, and in the Khura'inese military force this basically means he's screwed. He's got jailtime at best and execution at worst ahead of him, so he starts rifling through the papers to find anyone that would be willing to take his case. Of all the feelers he sends out, the only response he gets is from a guy that got his badge about 2 seconds ago after a childhood of yak milking and street performing. Alright, better than self-representation. Hopefully.
This is followed by a very game-1 case-1 sort of case, with Dhurke needing subtle reminders from the judge of how to do his job and Datz proclaiming his innocence every 3 minutes from the witness stand and being told to shut up before he gets another charge laid on top of whatever he was already on trial for. After a few hours of falling upward, Datz is declared innocent and gets to celebrate for 30 seconds before another high-ranking official walks up to them in the courtroom lobby and tells him he's discharged and can never speak of any of this ever again to anyone. Yippee!
After this, Datz has nowhere to stay because he was banking pretty hard on his job for housing. Dhurke and his case-1 mentor (whoever that ends up being) invite him out to a meal afterword to celebrate his innocence, and after an evening of humming and hawing Dhurke offers to let him room place while he gets back on his feet. This, of course, blooms into a beautiful friendship, which subsequently explodes into a revolution.
As for declaring feelings, I think there's two general directions this could go (obviously not the ONLY options, just the two that work best in my head):
Someone finally confesses sometime post-Amara. If I'm taking my own fanwork into account (but who would do that?) and saying Dhurke had a change of heart about being there for the people he cares for circa 2018, maybe he finally gets his head out of his ass and tells Datz how he feels then. After years and years of Datz being there for him when nobody else was, I could see it finally clicking. In my heart, it's 100% a "Datz is too much of a coward to say anything for 15-odd years and Dhurke was so busy thinking about other things he never mulled this over until now" situation.
The much more evil option, which is Datz finally telling Dhurke about how he feels after Dhurke is already dead. Due to the nature of the series, this is 100% possible. Maya definitely owes Datz some favors by now, and I don't think it's unreasonable that she would channel someone for him if he asked.
Future Neo edit: this isn't to say they couldn't go through months of will-they won't-they romance beforehand. That's absolutely on the table, and would make things even more messy and complicated (peak).
On one hand, this could be a really fun thing to write an actual fic about. On the other, I'm terrified to write a trial because of all the plot hole potential.

Why, I'd love to! And it's no pestering at all, I've been looking for excuses to talk about these two all week!
SoJ spoilers, of course.
I think the thing that flipped the switched about them in my brain was probably hearing that Datz played a big role in raising Apollo and Nahyuta, because anyone that's been near a toddler knows that any two people that can work on keeping them alive together (ESPECIALLY two of them and ESPECIALLY during a stressful time) have to share a TIGHT bond. When my friend and I learned about just how involved he was in their family we couldn't stop cracking jokes about it through the case. Like Dhurke clearly trusts this guy enough to place the lives of his boys in his hands, so there has to be some more depth to this than meets the eye.
I also love both Dhurke and Datz separately, especially since their highlights in SoJ also ended up being my favourite moments in the game. Dhurke really steals the spotlight in case 5, showing the tension between his desire to lead his rebellion and the inherent danger it brings to him and his loved ones (which I've already explored a bit in one fic, but I desperately want to write on more in the future). As for Datz, the reveal of his identity in court was genuinely so fun and I was overjoyed when I found out he would be recurring. Learning that they spent a lot of time together also revealed a lot about their personalities in itself, like how Datz can show loyalty and immense skill when it counts (why else would he hold such a high rank?) and how Dhurke must have an infinite pool of patience (imagine living in a house with Datz and two five year olds).
They really blended into the perfect storm of traits to make them some of my favourite characters in AA. I love when nearing-middle-age guys are given a highlight in VNs, ESPECIALLY if they don't end up being terrible people/surprise villains. They got just enough screentime (or at least discussion) to really show off their characters and give us more to chew on than one single trait each (AKA the AA special). It's a shame they weren't able to dodge the curse of being a parental figure in a Phoenix Wright game, though. At least Datz only got clipped.
