Aight so I've got a small headcannon I thought I'd might as well toss out into the either for someone to use if they want.

The reason it's so hard for Eda to find food Luz can eat is because witches are carnivores, not omnivores like humans, and she's assuming that every plant that's poisonous to witches would also be poisonous to humans.

Sure witches can eat some plant matter to help with digestion or just cause it tastes good, but it's a fairly narrow range of foods and only makes up a small percentage of their diet.
