The Monell Center is the world’s only independent, non-profit scientific institute dedicated to interdisciplinary basic research on the senses of taste and smell.
At Monell, world-class scientists are unlocking some of the most fundamental mysteries of what makes us human. How do we use our chemical senses to communicate? What are the cellular underpinnings of taste and smell that contribute to the difference between lifelong health and chronic disease? How do our chemical senses shape human nutrition? Which genes are responsible?
Monell’s long-standing interdisciplinary model was itself a scientific experiment when the Center was founded more than 45 years ago. Today, Monell remains a nexus where outstanding scientists from many disciplines work together to focus on a common objective: understanding the mechanisms and functions of taste and smell and how these senses relate to human health. The Center’s integrated research approaches range from basic molecular biology to behavioral neuroscience, from cellular biology to comparative ecology, from analytical chemistry to clinical work with human patients.
Monell scientists are at the forefront of discovery, exploring the senses of taste and smell in order to answer pressing questions about health, behavior, and the environment that we could not even foresee a decade ago.

Perfumer's Apprentice is an independent fragrance house offering fragrance creators a level playing field to compete among the large house brands.
Perfumer's Apprentice opened in 2004 as a fragrance creation boutique, the first of its kind to offer individuals the opportunity to blend perfume with their own hands using professional fragrance ingredients such as aroma molecules and specialty blends from International fragrance houses such as Givaudan, Firmenich, IFF, Robertet and many others. Soon after, Perfumer's Apprentice branched into being an online education and ingredient supply resource for fragrance enthusiasts and established Perfumers where they sell the ingredients offered in their boutique along with educational kits to help beginners appreciate the complex art and science of perfumery.
As their customers continue to grow, Perfumer's Apprentice is expanding into a more robust small business resource by offering professional services to Indie and Artisan perfumers such as compounding, turnkey business services as well as regulatory documentation. Perfumer's Apprentice recently launched a new concept called the 'Artisan Perfume Lab Rental' which gives Perfumer's an industry-grade fragrance lab with open access to the entire library of raw materials, regulatory software, staff and lab services. In an effort to further elevate Indie and Artisan Perfumers, in 2018 Perfumer's Apprentice acquired direct-to-consumer fragrance brand 'Scent Trunk.' By vertically integrating with Scent Trunk, Perfumer's Apprentice aims to give lesser-known Perfumers visibility to a broader consumer market in a way that honors their individuality while communicating directly to the customer through the art of scent. Perfumer's Apprentice continues to seek creative ways to elevate budding perfumers through strategic partnerships with organizations such as the Institute of Art & Olfaction, Indie Perfumer's Guild, The Fragrance Foundation, and the Fragrance Creators Association.

A native of Buenos Aires, Argentina, of Portuguese and Spanish descent, Gus was brought up in a culturally diverse environment that forged his aesthetic perception. His family’s deep traditions inspired a love for nature and some of his most vivid memories have connections to the sense of smell. Earlier in life he pursued a career in Chemistry, cut short by his moving to the US. Despite having taken a different professional path, Gus has always kept his passion for perfumery alive. Over the years he has pursued a formal education by attending courses at Pratt Institute, GIP in Grasse, ISIPCA in Versailles and most recently at the IAO in Los Angeles. He believes NYC deserves a “well structured” learning program for aspiring perfumers and is working with many contributors to achieve that.
