The servings of my butternut squash risotto ended up being a lot smaller and more calorie-dense than I expected, so I bulked it out with a bag of riced cauliflower, more cooked spinach, and more of the butternut squash sauce ☺️
I’m very, very pleased with my dinner 😬

I love store bought veggie burgers as much as the next plant-based person but the coat starts to add up, so I decided to create my own recipe with simple, cheap ingredients that you can find in any grocery store! 👍🍔
Portobello mushrooms, onions, and garlic give these burgers an amazing flavor profile while lentils add great bulk and texture 😋 I’ve made other recipes in the past that have been a crumbly mess but thanks to some flax eggs and oats these patties honestly stand up even to pretzel buns!

Vegan Stew


The cold air has been making me crave soup all of the time so I decided to make a vegan stew to warm me up!
Recipe:
1. In a large pot add a couple tablespoons of olive oil, 4 large carrots (chopped), 4 stalks celery (chopped), 1 onion (diced) and 2 cloves of garlic (minced), salt and pepper. Sauté for 4 minutes.
2. Add 6 cups vegetable broth, 1 small can tomato paste, 6 medium gold potatoes (chopped), 1 can pinto beans, 1 tbsp garlic powder, 1 tbsp rosemary, salt and pepper.
3. Bring to a boil, cover, reduce heat to low/medium and simmer for 1 hour.
4. Create a slurry by whisking together 4 tablespoons flour and 1 cup of the hot broth in a separate bowl. Add into the stew slowly to create a thicker consistency.
5. Add 1 bag frozen peas and simmer for 5 minutes more.
6. Let cool and serve!
This stew was so good and I had way too much of it to be honest!

am i feeling overwhelmed? what’s really bothering me? can i write it down? what am i avoiding thinking about?
am i reacting rationally? what would i tell a friend who was experiencing this? what can i learn from this? isn’t that what’s important?
am i god? do i control everything? is worrying going to serve a purpose?
