A random blog about childhood food
Hello, everyone! Today's topic for recifee recipe is childhood food. I am doing a more interactive blog today. So what is childhood food? Childhood food for me personally, is just a weird innovation of a combination of weird but are compatible with each other. Why is that? This is because we did a lot of weird stuff as a kid. I mean my childhood food is actually fried chicken. Okay, that sound so normal, right? Nope, you are wrong cause we also love to have a dipping sauce and guess what my dipping sauce is? Well, let me just tell you, it is vanilla ice cream.
When I was about 5 to 10 years old my taste bud is interesting you can say. My family always when out to eat at Ayamku restaurant which is a local fast food. I mean every Brueneian knows that. So they have this kid meals with the fried chicken and ice-cream. I think I was either smart or just lazy during that time maybe both. I think the reason why I dip it in the ice cream was because the chickens is too hot and I am hungry plus lazy to blow the heat, so I dip it in the ice cream. It is a genius idea to not blow the heat away and to just eat it. So I actually try again as an adult. I found it, delicious. Well I guess the kid me really is on to something. You all should try it.
Another common one is the mayo bread. Just a bread with spread mayo. Well I do not like this now in the present but the mayo sandwich is my everyday snack. I used to love it so much. And if I remember, instant noddle especially the "Maggi Asam" one or you can say the blue packet one, I added ketchup using the same brand. I still do it today. Guilty but it is delicious. I mean we also add fried nugget to the instant noodle at some point in our life . That is what I can recalled, I think I actually have more like salmon with chocolate. Its kind of funny when I started to learn science back in the days. Salmonella is a name of a bacteria and all I can think is salmon and Nutella combination. Maybe I should stop. So what is your weird and confusing combination of food from your childhood? Cause I would like to know. I hope that I actually not alone with my weird innovation.

Why am I not a vegetarian? One word Salmon.
Okay, another topic for today recifee recipe. Grilled Salmon and mash potatoes with black pepper sauce. Wow we are going fine dinning with Recifee. So salmon, that one reason I am not a vegetarian. I love salmon. Salmon is a oily fish that is have rich protein and omega 3 fatty acids which is good for the brain. For all your students need. Salmon is also the time of fish that all you need is just salt and pepper to season it. This is because they already flavorful. I can not wait to hang out again. I miss dining out with my family as in, in a restaurant and have a fine dining there. Salmon is consider to be one of the fancy food other then steak. Where is your favorite place to eat salmon? Mine is either, Jazz bar and Grilled and Charcoal. So anyway back to the topic, you can make your self at home if you want your on fine dining. Because everyone deserve it.
Here are the ingredients
Salmon
olive oil
A small cube of butter or about 10 g
3 garlic clove
seasoning: Salt, pepper, herbs and chili powder.
1 or 2 potato
1- 2 tbsp of fresh milk or low fat milk.
Black pepper sauce:
Olive oil
1 clove garlic
1/4 of onion
1 tbsp of butter
1 tbsp of flour
60 ml of fresh milk
Optional: 60 ml of water
1/4 chicken stock
Black pepper
1/2 Dark soya sauce
Marinated your salmon with salt, pepper and chili plus herbs in each side. Then boil your potatoes on the stove using a pot, cut it in half for faster process, make sure it is on high heat then add salt about 1 tsp. Then you can make the sauce. On another pot, using medium heat, heat up your olive oil and saute chopped garlic until fragrant. Add in the onion and continue sauting for another minutes until changing color slighty. You can also puree them in a blender for more fine texture and make it as a paste . Its time to make another roux methed sauce. Melt the butter, add flour and stir quickly until it become paste. Gradually add milk and stir quickly until smooth. Once boiled, add in chicken stock, onion and garlic paste, black pepper, soy sauce and salt. Add water if necessary. Turn of heat
When the potato is done drain and peeled them. Smashed the potato using a fork or potato smasher and add milk. Then back to the stove with a frying pan, on high heat. Dizzle some olive oil and add on your salmon skin first. To make the skin crispy. Flip after 10 or 16 minutes, lower the heat and add butter and garlic with a spoon that that butter goodness form the pan and pour in back to the salmon. Repeat several time until the salmon is just about to cook. Turn off the heat and assemble time.

I assemble them like this, its kinda empty...Like my soul. Anyway you can add salad or coleslaw. But because this is kind of ingredients that already available in the kitchen, I just wing it. Fresh ingredients is hard to find now a days because of the pandemic. Hey its still fine dining. Look at that crispy skin thou!! NICE! Its actually medium rare salmon, you can make it well done but never OVERCOOKED a salmon. That is the biggest nightmare you can have.

Yes, you read it as another Italian cuisine recipe because why not? It's just that Italian cuisine is easy to make at home, and it is also trendy. SO! Today's topic for Recifee recipe is lasagna with a twist. A vegetarian lasagna. Firstly vegetarian and vegan is different. Let's learn more about vegetarian. Noted that I am not a vegetarian just love to eat their diet. And also actually did an experiment myself about vegetarian food. More about that later if you are interested.
So what is a vegetarian? A vegetarian is someone who cannot eat animal meat and its products or any part of the body of a living or dead animals. This includes meat, poultry, fish, insects or any processing aids created from animal meat or animal product. Their diet consists of grains, pulses, legumes, nuts, seed, vegetables, fruits, fungi, algae, yeast and other non-animal-based foods with or without dairy products, honey and eggs.
There is actually many type of vegetarian:
Vegan
Vegans is a strict vegetarian that do not consume any animal meat or even their products such as red or white meat, fish or fowl, eggs and dairy products. Vegans also do not consume any honey or beeswax, gelatin and other animal by-product ingredients or products. Not only in the terms of food, in fact vegan do not use any animal products such as silk, leather and wool.
Lacto-vegetarians
Lacto-vegetarians do not consume any animal meat and eggs product. However, lacto-vegetarians do consume dairy products such as cheese, milk and yogurt.
Ovo-vegetarians
Ovo-vegetarians do not consume animal meat and dairy products. However, ovo-vegetarians do consume egg products.
Lacto-ovo vegetarians
Lacto-ovo vegetarians is actually the most common type of vegetarian. They do not consume animal meat however, they able to consume dairy products and egg products.
Pescatarian (Pescetarian):
Although it is technically not a type of vegetarian, these individuals do restrict their meat consumption to fish and seafood only. Pescatarians do not consume red meat, white meat or fowl. They are considered as a “semi-vegetarian” or “flexitarian”.
Pollotarian:
Much like the pescatarian, they are also considered as “semi-vegetarian”. This is because their diet contain restriction of meat consumption to poultry and fowl only. Pollotarians do not consume red meat or fish and seafood.
Flexitarian
Flexitarian is a plant-based diet with the occasional meat item on the menu. They limit their intake or consumption of meat as much as possible and they have an almost entirely plant-based diet. This is not technically considered a “vegetarian” diet.
With all of that consider, we doing a vegetarian lasagna specifically an lacto-ovo vegetarians version, its still used animal products such as milk, butter and cheese. You can change it to vegan by buying vegen cheese, that is actually available in Brunei, used other time of milk, like almond or rice milk and used margarine which is a flower based product. So anyway, as you can see from my lengthy blog, vegetarian diets has a special place in my heart. Back to the topic, Lasagna is actually existed way back from the Ancient Greece. It is the first form of pasta and it used to be called Laganon. However lasagne or lasagna was created in the city of Naples, Italy during the Middle Ages and its started to appear in the 14th century cook books. Therefore I created my version of lasagne using tempe or tempeh, a Javanese food made from soyabeans. Soyabeans are actually rich source of protein. Therefore it act as a meat for vegan and vegetarians.
Here are the ingredients:
Lasagna sheets:8 – 9 sheets
Mozzarella cheese
Meat sauce:
100g Tempeh
1 Onion
Olive oil
1 Large can chopped tomatoes
15g or 1 tbsp of Tomato puree
5g or 1 tsp of Sugar
1 Carrots
10 small florets of brocolli
Seasoning : Salt, pepper and herbs
Be’chamel sauce:
1 Bay leaf
1/2 of small onion
500ml of Low fat milk
50g of Butter
50g Plain flour
5g or 1 tsp of grated nutmeg
Seasoning: Salt and pepper
First you soak the lasagna sheets in hot or warm water, set it aside. On stove, in medium heat cook your milk on a pot, add bay leaf, nutmeg and half an onion. let it simmer, until you can smell the aroma. While waiting for the milk, you can preheat your oven to 180 degree celsius. On another pot with medium heat, sizzle some olive oil and add chopped onions, saute, then added minced tempeh, mix well and saute them well . Make sure you turn of the heat for the milk. Then added your canned tomatoes, tomato sauce and tomato puree. Added the sugar and seasoning and taste it. If you feeling like it is missing some things you can add more pepper, salt and sugar. Lastly add on the chopped carrots and broccoli. Let it simmer for 10 minutes.
Reusing the milk pot by removing the milk to a jug or used a new one, it is time to make roux method sauce. In medium heat, add butter to the pot, until it melt then add flour. Stir well and make sure the texture is paste like. Then lower the heat and add milk mixture slowly and gradually at a time but stir quickly and do not stop until smooth and the milk is finish. This is to prevent lumps. Make sure you already drain your milk such as removing the onions and bay leaf. Then you can added the cheddar. Add salt and pepper for taste.
Its assemble time, in a casserole or over-prove dish add meat sauce using a ladle, then the bechamel then the lasagne sheets. Repeat until no space add Mozzarella. Oven it for 15 mins or until its golden brown.

Tadah!!! As you can see, it does look like a normal lasagna. That actually a mission accomplish for vegan and vegetarian. I have trick my family, they thought that its a chicken lasagne. Wish is a biggest compliments. It called TVP or textured vegetarian protein meaning creating something that act as the meat and have the same textured. Tempe is one of it, if you mince and chopped it, it look like a chicken. I have done experiments like this with my other friends. By serving them two lasagne one is chicken and one is tempe. They love the tempe on better than chicken. It is kinda funny to see their shock faces. Other noted you can also change the recipe if you want chicken or meat just change it. But this Vegetarian Lasagne is a must bake and have. Its actually better then meat or chicken plus its cheaper tempe only cost $1 and you can get 4 of them.
Not a vegetarian just love to cook like one.

Burger go BURR!!!
Hello again everyone, today topic for Recifee recipe is about Hamburgers! SO!!Hamburgers or people also called it burger for short is the main character in a sandwich show. They are part of the sandwich family. Burger change over time but the first ever burger was created way back at the 1st centaury in Rome. So anyway, burgers comes from many variety from beef, chicken to seafood and vegetarian. Most burgers used mince meat while the other such as chicken and fish just use like the boneless chicken breast or dory fish as a whole. Even fast food does this such as Jolibee and KFC.
Burger is a fun food because you can add sauce or not, cheese or not and extra meat. So for Recifee burger we making a grilled chicken burger, for a cheaper options. This is because mince meat is hard to find during the quarantine and expansive. Other then that, people are missing out grilled chicken burger because usually people fried the boneless chicken.
So here are the ingredients:
Burger bun
boneless chicken breast
Italian cheese or singles cheese
Egg
Optional: Mayonnaise and chili sauce
olive oil
Butter
Seasoning: Salt, black pepper, white pepper, chili pepper and herbs.
Before cooking, marinate your chickens with the seasonings the reason why I do not put the amount because its depend on how many burger you make. But just for references a pinch of salt, about a teaspoon of white pepper, sprinkle of black pepper, if you want a spicy kick sprinkle the chili pepper and herbs on the chicken, mix well. If you do not have a boneless chicken breast, you can also debone the chicken themselves if you can or ask an adult but i does not matter if the adult is you yourself so ask help from your mother, who is the master chef of the house.
After that, cut the burger bun so you can toast it. On a stove, using medium heat with a frying pan, add butter and cover you pan with it so you can toast the buns. After toasting, in a medium heat dazzle some olive oil, you can reused the pan to grill your chicken or you used a new pan. Flip after 10 mins, if you have a skin boneless chicken breast, grilled the skin part first until you can see it turns crispy. After done grilling close your slove, this is weird but assemble first, you may know it later why. Spread your mayo and chili sauce on one side of the bun, if you have vegetables you can add it too. Then the grilled chicken with the cheese on top so the cheese can melted from the heat of the chicken. Back to the stove, in medium heat dazzle some olive oil and crack an egg to the pan, close the frying pan, wait until you can see the white is cook, turn off the heat and assemble on of the burger.

If you love to make a patty version, just change it to mince beef or chicken and just add bread crabs. You can also so a grill dory fish burger or a vegan one. Burger is an easy food to make because you can do anything you want with it, for example add grilled onions or mushroom, add beef rasher, blue cheese or even barbeque sauce. That why I love it. Below are the video of the burger, the yolk is everything but if you love cooked yolk, you can change it. The reason why I cook the egg later so that the yolk would not be solid or cooked. This is actually how I do my sunny side eggs, a runny yolk by using a cover when I cook them. A little fact, the white is cooked because and the yolk is semi cooked because when you cover the frying pan, it will act as a steamers.

Hello everyone! We are bring it back with another Italian cuisine for today Recifee recipe. I am being bias with Italian cuisine because its one of my favorite another then Bruneian, maybe I should bring Bruneian cuisine in another episode of Recifee recipe. Anyway, back to the topic as you can see by the heading, I would love to apologize if I triggered some of you or all, but today topic is about Pizza.
Pizza is basically inspired by a flatbread and they added toppings creating worldwide favorite food especially for children and teenagers. People also called Pizza as a type of pie. The Pizza first created with a topping of 3 simple ingredient which is red tomatoes, white cheese and green basil. A classic! Even until now in this modern era which you may known as Margherita pizza. SO! You may ask or not what is with my heading...Well I will destroy the pizza by creating a lazy pepperoni pizza.
These are the ingredients:
Loaf of bread
Pepperonis
2- 3 tbsp of mayonnaise
3- 5 tbsp of Pasta tomato sauce
Mozzarella cheese
Seasoning: Pepper and herds
Optional; Onions
Yes you read it, you see it, a bread .As always before anything else, preheat oven at 180 degree Celsius. This is the easy step, with a pizza pan or any oven pan you have spread you the bread, you can also roll your bread first to have a thin "crust." Then add mayonnaise, spread it on the bread or crust. After that spread the pasta tomato sauce, any brand usually Hunts brand is a good canned tomato sauce. Add on your pepperonis, I do not specifically tell you the amount, because you can adjust your self, I almost over pepperoni on the pizza myself. You then add the seasoning if you want such as black pepper. You can also add cut onions, and cut green or red pepper for added color and flavor. Lastly cover it with a hefty amount of cheese. If you are feeling fancy sprinkle some herbs on top. Oven for about 15 mins or until its golden brown.

Delizioso!! Tada!! Your own pepperoni pizza, it is nice that you can control the pepperoni. Some pizza is a sad pepperoni because of the small amount but not when you are making it, you have the power!! I mean I am sorry it is not a complete circle pizza, because there is no bread. I bet that the Italians are shaking right now. I am sorry, that I lazy to make the dough, but if you can survive pineapple pizza, you can survive using a bread for a pizza. You can also make mini one in a square shape pizza for a simple hangout party using just a bread as the trust. You can also used a wrapper that people used to make burrito or chicken wraps. You can also used a French loaf. Many possibility!!!Or just buy a pizza base from supersave or something.

Cake in a pan? Pancake!!
Have you ever wonder why does pancake is called pancake? Me too!! So today topic for Recifee recipe is about the well-known member from the breakfast family, Pancake!! So pancake is actually existed way back from ancient Greeks especially from the 600BC by a poet who describe the warmness of pancake in one of his writing. In the old days pancake only have three ingredients which is flour, egg and milk. However, in this present time people love to give more ingredients such as sugar, salt, vanilla essences and colorings in the pancake to make it look interesting and attractive. So anyway back to the question, my theory will be because if you make many amount of pancake and staking the pancake, it will look like a cake plus you also made it using a pan. We are doing a spongy chocolate chip pancake.
So here are the ingredients:
1 cup of pancake mix
1 cup of milk
3 eggs
Olive oil
Butter
1 tsp of vanilla essences
1/2 tbsp of sugar
Maple syrup
Decoration: Banana
Optional: Chocolate chips
First of all, the hardest part separate the white and yolks. Then mix well; pancake mix, milk, yellow eggs, vanilla essences and a dazzle of olive oil, about 1 to 2 teaspoon. Then with a electrical mixer or a hand mixer whisk the whites until you can see it turn foamy, when it turn creamy or soft peaks add sugar gradually until the whites become stiff peaks, a fun way to check is put the bowl over you head if the mixture fall to your head, its not stiff peak. After that fold in the other mixture gradually using a spoon or in the 8 technic folding. To fold it just slowing scoop around the mixture and flipping it, repeat the process. An important reminder do not used a whisk as it can remove the air that you cooperates in the whites.
Why people have burn pancakes? cause they cook it on high heat, medium heat FAM. On a stove with a frying pan, butter the pan and scoop your batter using a ladle and pour in the middle to create a circle shape. When you see that their is a bubble which indicates it is time to flip, add the chocolate chips first before flipping. You do not need chocolate chip if you just want a regular pancake. Repeat the process until the batter is finish. It is assemble time, stake the pancake, dazzle the maple syrup, add the cut bananas and a fancy small cube of butter. Tada!!!! Your pancake is serve.

Its beautiful, I cry every time looking at this even the cuts is aesthetically pleasing. Anyway, a little random story, do you know that McDonald have a breakfast set with pancakes. When I was in Singapore which is way back in 2010, my mother and I always walk to McDonalds every morning just to buy the pancakes for the whole week staying there, because during that time Brunei's McDonald have not breakfast menu. Even when we travel again in Singapore during 2019, we also buy the breakfast set at least 2 day on the one week stay. So what is your favorite pancake place? Mine will always be Singapore McDonald, their pancake have a special place in my heart or stomach. But, I also have love this pancake, not bais cause I made it, but because its delicious.

Nacho movie night without nachos!
Hello everyone! This is Recifee bring you with another recipe. Sorry for the late update, do not fear I am still alive. Anyway, today topic is about snack specifically a snack for movie night! So what is a movie night? Is it a night watching movies? A night to spend time with your family? Oh boy! I have perfect snack for you!
So Nacho, a Mexican cuisine made by Mexican for America. They created such delicacy because the need to make a quick snacks using what they can find in the kitchen which is fried tortillas, melted cheese and jalapeño peppers. A very simple and vegetarian snack. However, now a day people used Bolognese sauce which is a tomato based to make nachos. Nachos is definitely my favorite snack especially when I on a mood to watch series or movies. It remind me of the days before quarantined, miss the time when I went out to see a movie in the cineplex, I miss the environment of the cinema and also the Nachos. Therefore, I made it my own Nachos using the a tomato based sauce and sour cream.
So here are the ingredients:
A bag of tortillas
Mozzarella cheese
Tomato based sauce
150g- 200g of Pasta tomato sauce
Seasoning: Salt, pepper, herbs, sugar
Olive oil
Optional: 100g-150g Minced beef/minced chicken
Optional: 1 Onions
Sour cream sauce(Optional)
2-3 tbsp Sour cream
1 tbsp mayonnaise
1/2 lemon
1 Garlic cloves
Seasoning: Herbs
As always preheat your oven 180 degree Celsius. While it is heating, on the stove, dazzle some olive oil in a pot or frying pan in high heat. Fry onions until you can smell the fragrance. This is optional for anyone, because not everyone love onions and its also out of stock. Then, add on the minced beef or chicken; This is also optional step, you can skip this part if you wanted a more vegetarian or vegan option. You can also added Tempe (Soya) that act a textured vegetarian product(TVP). Add on the seasoning such as a pinch of salt, hefty amount of black pepper, some herb of any kind like thyme or oregano and then a pinch of sugar. Mix well, put in low heat, rest until the meat change color. Then you can add your pasta sauce, I used chunky organic pasta sauce and added a lit of about tablespoon of other pasta sauce. Mix well and taste.
Now its assembling time, a tips to save all of you from a sad soggy Nachos syndrome. Pour in your Bolognese sauces first in a casserole dish or oven-proof dish. Then cover it with your tortillas chips, mine was cheese flavor. This is to prevent your tortillas from being soggy. Then sprinkle some cheeses. Oven for 15 minutes or until the cheese is melted. While waiting, using a bowl mix in the sour cream, mayonnaise, squeeze half a lemon; another tip for people who have no lemon squeeze, use a fork to help the squeezing process, smash one garlic and add herbs.
When the nacho is done serve it with the sour cream. Hope you have a good snack on your movie night!! If you love soggy Nachos. Im nocho friend anymore.

Dalgona who? Ice-Blended Coffee is where its at!
Hello! We are back! With another Recifee's recipe. So! Dalgona one of the most viral coffee, everyone had tried it, tempted by it. I know!! I am guilty because I was one of them, but its time consuming especially when you do not even have specific equipment like an electrical mixer. However, even with the electrical mixer its still take time. I even question myself, if I can make another coffee like dalgona without wasting my time creating it. So with my two brain cells and love of coffee, I answered my own by creating kinda Dalgona ice-blended coffee, inspired by Coffee Bean and dalgona.
Here are the ingredients:
4 scoop of Vanilla ice-cream (or at least reach 2 cup in your blender)
1 tbsp Nescafe
Quarter cup of hot Water
Half a cup of milk
6-10 Ice cube(Depending on the size; If its bigger then add less)
Optional: 2 tsp of Vanilla essences.
Its easy to make as long as you have a blender. Mix water and Nescafe together well. Make sure the mixture is cool down before adding to the blender. Then put all of the other ingredients, blend until fine, serve it to your favorite cup. You can add whip cream for aesthetic and taste purposes. Another recommendation if you guys have a coffee machine just used 2 shots of coffee, meaning you don't need to add water in it. I don't add sugar because I love the bitter taste in coffee, however you can add about the same amount of Nescafe that you add, if you want. This can serve 2 to 3 people but If you are like me then one only (。•̀ᴗ-)✧.

IT ALIVE! Its Baked Feta Pasta!
Hello everyone, this is Recifee. Today food recreation topic is about the trendy pasta in Tiktok called Baked Feta Pasta. This trend gone viral by this Tiktok video made by Liemessa. The word "feta" mean Greek white cheese which we all known as cream cheese.
The basic ingredients for the pasta sauce are cherry tomatoes, garlics and cream cheese. I do not fully followed from the Tiktok recipe because there is no further instructions on its quantities or how much. So I made the recipe by knowing the basic. The serving size for this recipe are for 3 to 4 people.
Here are the ingredients:
Any kind of pasta noddle 250-300 grams
1 block (250g) cream cheese
2 box of cherry tomatoes
4 garlic pips (Clove)
A dash of olive oil
Optional: BMC Chicken meatloaf
Seasoning or Spices( I used Salt, black pepper, Walker Bay garlic & herbs and cayenne)

From that ingredients list, we can already notice the mistake. But do not worry! Recifee is here to save the day and we will take about the mistake later in this blog.
An important cooking tip for cooking pasta noodle, make sure to season the boiling water with salt, making it taste like the salty sea and after cooking to al-dente (which just mean firm when bitten), save a cup of the pasta water before draining.
Start preheating the oven between 180C-200C. Using a glass casserole dish or an oven-proved dish, dazzled some olive oli, put in your cherry tomatoes, garlic pips and the cream cheese in the middle. Add your seasonings and baked for 20 - 25 mins or until some of the tomato skins start peeling it self.

While waiting, grilled the chicken meatloaf with olive oil until crispy. This is just optional but I do recommend doing grilled chicken breast. Maybe just simple seasoning like salt, pepper and some chilly powder just for that kick of spice.
Take off your dish from the oven and smash the feta tomato until it looks creamy. Now the mistake, I tasted to make sure the seasoning is right and all I can taste is cheese. Its just to much! and this coming from cheese lover.

So I Improvise, I was lucky to have a can of chopped tomatoes stored in the cabinet, I added about half of the canned tomatoes which is about 205.5g, you can also just estimate by adding and tasting along the way until you can taste the tomatoes. My recommendation If you guys are trying this recipe, make sure the cream cheese is only a half a block or increases the amount of tomatoes.
I also added about quarter cup of pasta water. This is the reason why its important to save the pasta water because it can enhance flavor; its salty without needing to add more salt on your pasta. In addition, the starch will also act as a thickening agent and added silly richness to your sauce.

Finally, remember about the crispy chickens meatloaf; I chopped it into small pieces, then sprinkle it on top of the Feta pasta and adding garnish with some fresh parsley for that pop of color. I give this pasta a solid 8/10 , I will definitely cooked this again knowing my mistake. So here are the picture of finishing product! Hope you guys enjoy. Hello everyone! I am Affifah and this is Recifee.
