I can’t stop making light, lemon-y spring pastas right now! This is a shrimp, asparagus, garlic-lemon pasta. It’s super fast to put together and can be eaten hot or cold. I like to shred some Parmesan on top before eating. I sautéed garlic, asparagus, and herbs in butter, then added shrimp, lemon juice and a little white wine to deglaze. Combined with more olive oil, s&p, and @jovialfoods pasta. I had a lot of butternut squash to use up, and it’s rainy and gray out, so I made butternut squash soup in my @vitamix. So easy, creamy and delicious. With the leftover squash I made some wonton butternut ravioli. Butternut Squash Recipe: Cook 1 butternut squash til tender (I prefer roasting in the oven on 300 F for 30 mins). Cut the butternut into chunks and add to a pot with 2 cups of broth, 1 peeled and cored apple, 1 tsp allspice, 1 tsp of nutmeg, s&p to taste. I cook it a little longer in the pot on medium heat, about 8 minutes. Then I blend it and it’s ready to eat! You could use any blender or hand blender. You could add @greekgodsyogurt plain Greek yogurt before blending to make it a little more creamy. Sick Day Snacks: Toast with cream cheese and cucumber (salt and pepper) Bold Ginger Ale @canadadrygingerale + a story about why this IG exists. I started my Med Snacks instagram after I was recovering from an injury to my stomach and throat muscles. “Gastroparesis is a condition that affects the normal spontaneous movement of the muscles (motility) in your stomach. Ordinarily, strong muscular contractions propel food through your digestive tract. But if you have gastroparesis, your stomach's motility is slowed down or doesn't work at all, preventing your stomach from emptying properly.” (Mayo Clinic) For about 6 months in 2014, I was worried I was not going to be able to eat normally ever again, or maybe not eat at all unless it was through a tube or IV. I went through countless tests and I was experiencing the worst pain and vomiting of my life after every meal or snack. Crippling pain led to ER visits, which as a nurse, I will only go to the ER if I truly think I am dying. I was worried I had cancer or something else very wrong. Eventually, after months of tests, I was diagnosed with #eoe and #gastroparesis. A few years later a geneticist doctor discovered I have a connective tissue disorder called #ehlersdanlossyndrome and a condition linked to it called #dysautonomia. These all can lead to #gastroparesis and #dysmotility syndromes. I was reassured it’s nothing I could pass along to my kids, but it’s definitely part of my DNA and there is no treatment and no cure. Over time, with prayer, medicine, and physical therapy, some of the nerve damage to my stomach healed (not all but some) and I was able to eat “normal” food again-not all the kinds of food I had once enjoyed or the quantity, but most. I still have “flares” like I am having right now, which is when I just sip on ginger tea, or ginger ale, and try to eat bland toast and easy to digest food—and then I pray I won’t throw it all up. Today’s dinner was tricolor orzo pasta with asparagus and fresh garden herbs. I’m so excited my garden is thriving this year! This dish is creamy and fresh. Perfect taste of spring in one dish! Recipe: 1/2 cup white onion Bunch of asparagus 2 cups of orzo 1 stick of butter 1/2 cup Greek yogurt 1 cup of spinach Salt, pepper Fresh herbs (dill, oregano, lemon mint, lemon grass, parsley) 2 lemons 5 garlic cloves Cooked chicken breast I cooked the chicken with 1 lemon, water and some garlic cloves in the crockpot last night. I chopped it up and put it aside to add to the pasta later. Cook the orzo to al dente. Chop and Cook the white onions in a pan with butter until translucent. Chop asparagus into bite size pieces. Cook the asparagus with butter and salt for 10 mins on the stove on medium with the onions. Combine veggies with the pasta and stir in yogurt and remaining butter. Add herbs, spinach and stir until spinach is wilted. Pepper and salt to taste. Squeeze lemon juice over it. This tastes good hot or cold! https://instagr.am/p/B__Vd7ghbTn/

Me and my 9 yr old made whole wheat sourdough bread rolls with our sourdough discard. I wanted to experiment and see if I could make anything good without a recipe. We slathered them with @kerrygoldusa butter and @bonnemaman_us jam preserves. They were so delicious! I have been feeling rather anxious lately. I don’t know if it’s the extra stress from working at the hospital more often, or hormones, or what—just feeling that baseline anxiety. Simple kinetic things like kneading dough and gardening have been very helpful to me this week. What helps you feel less anxious? We had a fun summer Cookbook Club meeting! This month we cooked through the book “Trim Healthy Mama” which has lots of healthy recipes, many of which are compatible with special diet needs like no sugar, no grain or no dairy. We also made a bunch of their “sipper” drinks, which are healthy non-alcohol cocktails you can sip all summer long. My favorite was the “Singing Canary.” Here is the recipe copied from their website: “If you’ve been diagnosed with adrenal fatigue, you’ll want to make this drink a daily staple. If you are fighting a cold or need a battery recharge - drink the Singing Canary. It builds your immune defenses and detoxes your body. Due to the high vitamin C content it fights cancer and has weight loss benefits to boot! It has been formulated for tired, inflamed bodies; each ingredient was chosen to be a powerful adrenal healer. This beverage has no caffeine, it contains only ingredients that together create a delicious ADRENAL REVIVER! It contains 1 teaspoon of adrenal rebuilding, inflammation-fighting turmeric powder. This is a single serve recipe that makes 1 full quart to be sipped on all day. Another pot of chicken stock made today. This week on #speedketo is all about practicing short intermittent fasting or ‘one meal a day.’ I drink broth and electrolyte drinks in between the meals. I talked a little bit in my IG stories about my relationship with eating the last 5 years and what decisions I made before starting this program. Long story short, I had a stomach problem where I couldn’t eat without severe pain or vomiting. It lasted longer past my pregnancy where I also had hyperemesis disorder (not able to keep down food-happened with both babies I had) & I had to seek a lot of medical treatment (it took awhile to find the right treatment). I lived on a liquid and supplement diet with IV nutrition at times. Since getting better, I swore I would eat anything and try everything, and I’ve been thankful for every bite since then! But I was eating out of fear that it would be my last bite of real food & I wouldn’t be able to eat again. I can’t live out of a place of fear, nor can I continue to eat unhealthy all the time. The periods of time in between meals, purposefully fasting, have been unexpectedly emotional. I am so glad I have been able to face my fears.
