My Veggie Vegan Mac game gets stronger every time. 🥦🧀🔥 ROUGH INSTRUCTIONS Heat a couple Tbsp high heat oil in a pan to medium-high sizzling hot Slice one onion and add to the pan Don't stir! Slice a few handfuls of mushrooms and add to the pan Don't stir! Meanwhile, bring a pot of water to boil according to the instructions on a bag of penne pasta, add a generous portion of salt to the pasta water. Veggies in the pan should be getting brown now. Slice up a head of broccoli, add the stalk to the pan (yes it's edible just cut the hard part away) Stir! Let sit. Don't add the broccoli florets yet. When the large pot of water is boiling, add the pasta and set kitchen timer to aldente (mostly cooked, about 7-8min) Fill another medium sized pot with 2 cups non-dairy creamer and turn heat to medium high. Smash 4 cloves of garlic and rough cut, add to the creamer. Add 2 tbsp nutritional yeast, one container of vegan parmesan, and one bag of vegan mozzarella to the creamer. Meanwhile, rub oil inside a large glass or metal oven pan and set the oven to preheat to 400 degrees. Stir the pan veggies and add the broccoli florets on top of the veggies. Don't stir. Add a lid to the pan and turn the temp down to simmer. This should steam the broccoli. Keep stirring the cheese so it doesn't stick. When the pasta is done, strain it and make sure to run cold water over the noodles to stop them from cooking. With the oven preheated, add the noodles to the glass pan, cover them with a layer of veggies, and then pour the melted cheese evenly over the top of everything. Pop the filled glass dish into the oven and set a timer for 30min. Clean, you do you, then enjoy! Note: add a couple Tbsp of tumeric for yellow cheese color. Veggies can be whatever floats your boat! Anyone ever try switching out ingredients for similar flavors? Dill was sounding good for my salad this week and star anise is a common flavor in Asian cuisine, they both have licorice undertones. @bangrakseattle Bast Thai Downtown Seattle. So some of you know this but I'm lactose intolerant and really try to be vegan when I can. When I started getting SEVERE cramping pains at the age of 15, the doctors tried all the tests and literally the last thing they mentioned was - perhaps you should try soy milk. WHY do we have such a lack of awareness around these issues? Commerce and subsidies for long-running industries, of course! But what about pills pills pills (@st_vincent reference)?! I don't believe I need to compensate/guesstimate for something my body doesn't need in the first place. The veganism started as the only way I could confirm that there was literally no dairy in my food. Eastern cultures never developed an affinity for dairy products (until recently), so I never have to worry with traditional Asian food. BONUS: our society's SERIOUS lack of investment beyond the mainstream (which isn't really what you need for YOUR specific body anyway) lead to intensive investigation into our food industry, a love for cooking, and appreciation for local food culture. @hseanbrock was recently featured on @netflix Chef's Table, highly recommend his episode. He is working to preserve the bounty and diversity of our crops before the megacorps take over and eliminate your power of CHOICE.
