For brinjal puli kuzhambu:
Gingelly oil -3 tablespoon
Mustard seed -1 teaspoon
Jeera - 1/2 teaspoon
Fenugreek- 1/4 teaspoon
Tamarind - lemon sized
Brinjal- Medium sized 4 nos
Onion - 1 preferably small
Tomato- 1 medium sized
Salt - As per taste
Sambar powder- 1 1/2 tablespoon
Turn on the stove. Place the kadai
On the stove. Once the kadai is hot add oil, tempering items followed by chopped onion, brinjal and tomato. Let all the veggies cook in oil for about 2-3 mins. Now add salt and sambar powder to it and fry for about 2 mins. Once onion, tomato becomes mashy add one cup of tamrind water along with one and half cup of normal water. Close the lid and let the veggies cook on medium flame. Once the kuzhambu starts thickening turn off the stove. Your kuzhambu is ready to b served
For vazhakkai podimas:
Vazhakkai -1
Oil - 1 1/2 teaspoon
Mustard seed, urad dal, chana dal- 1 spoon each
Green chilli - 1 medium sized
Ginger - 1 inch ( Peeled and finely chopped)
Coconut - 2 teaspoons
Salt - as per taste
Cut the vazhakkai into half. Boil or steam cook the vazhakkai. Once the vazhakkai is cooked peel of the skin and grate it.
Heat a pan add a teaspoon of oil, followed by tempering agents and also ginger and chilli. Once chanal dal, urad dal starts turning brown n colour add salt, grated vazhakkai , and fry it for 2 mins. Switch of the stove and add coconut.
For cucumber onion raita:
Cucumber - 1 medium sized
Onion - 1 medium sized
Salt - As per taste
Pepper powder - 1/2 teaspoon
Jeera powder -1/2 teaspoon
Curd -1 cup
Peel and chop cucumber and onion.
Now add curd, chopped cucumber and onion,salt ,pepper powder,jeera powder.
Raita is ready to be served.
Medhu vada:
Urad dal - 1cup
Ginger - 1 inch (peeled and finely chopped)
Green chilli - 2 medium sized finely chopped
Salt - As per taste
Asfoetida - 1/2 teaspoon
Soak urad dal in water about 2 hours. Wash it in normal water and soak it.
Once it is soaked, drain out water and add it into a mixer jar. All about 3 spoons of water in 3 breaks until the batter becomes smooth and fullfy. Once batter becomes fluffy add all the ingredients and deep fry it ....
