First of all, this comment made my day.

I don't methodically follow a process, I proceed by feel ( That's why I often have artistic meltdowns😂) I use the lasso tool a lot to "sculpt" but I also use sample brushe with no texture, then I use blending tool (that add also a bit of texture)

I tried to start from black and white and then add colours with gradients, but it turned out pretty sh...ehm. (I have to learn gradients)
