This new release is designed for hospitality professionals and serious enthusiasts. I drank one of these ’01 Castell’in Villa’s right after the shutdown. I was having a sh!t day and the wine made me feel a lot better. It is profound and from a producer regarded as one of the illest & by some actually, THE MOST ILL. It’s always nice to drink for comfort & enjoyment rather than analytical reasons such as evaluating wine for the list. Although I was ‘off the clock,’ I couldn’t help but notice this wine is just starting its drinking window and will likely last and improve another 15 or more years. So, there it is. Having a sh!t day now? This wine will help. Plan on having a sh!t day in 15 years, the wine will only impress you more. Obviously, you don’t need to pair this wine with a sh!t day. You can pair it with a delicious dinner with friends or a slice of reheated pizza. Whatever the occasion it will only make it that much better. If you can find this wine online, it won’t be for this ridiculously low price btw. Impeccably stored in our vault & ready to impress. Thank you for your support!

Hey Portland! Shift Drinks Turns Five Years Old Today This isn’t exactly how we envisioned recognizing the 5 year milestone. It should be a day of great joy. ‘We f**king made it!’ kinda thing. Frankly, the joy is missing, but our VAST GRATITUDE is not. Thank you for supporting us over the years. We cannot express fully what it means to have a place where we can practice & refine our craft. A place filled with Portlanders from all walks of life. A place where our peers & community meet. A place of refuge. A place of enjoyment. A place of nourishment. It has been our immense pleasure to serve you. Although the future is very uncertain, we want you to know what this journey has meant to us.

Unusual Flavors Starter Kit, Lineup of 4 $45 PURCHASE HERE please visit our website to purchase from our vault to your front door PORTLAND ONLY We’re not tastemakers, to some degree we try to be educators. Here’s a package of non-mainstream items to enjoy. Brettanomyces: Parri 'Tenuta Corfecciano Urbana' Chianti Montespertoli Riserva 2013 - ‘Brett’, a hot topic in wine for a while. It’s hard to find on the web [probably because of lawsuits], but 1990 Château Montrose created tension between American critic Robert Parker and his counterparts in England. A sort of power battle between egos over the detection of brett in the famed Super Second’s release. Can a wine be truly great if it has brett? Certainly, famed properties like Spain’s Vega-Sicilia went to great lengths to brett-proof its cellars. Many U.S. winemakers in the aughts [‘00’s] jumped on the anti-brett train to differentiate their portfolios & sell more wine. Thank goodness the ‘natural wine movement’ came along to further this somewhat annoying discussion because baby, brett is cool again! Taste its saddle leather nuance in a light-bodied Riserva from Tuscany. Acetaldehyde: Hidalgo 'La Gitana' Manzanilla Sanlúcar de Barrameda – the biological ageing method in this sherry under ‘flor’ creates acetaldehyde, the resulting flavor: nuts, apples, olives. La Gitana is a benchmark for Manzanilla. If this is your first time with Manzanilla/Fino styles, try not to think of it as wine, but liquified Marcona almonds & Castelvetrano olives in a glass while standing on a beach soaking in salty air. Skin Contact: Mansus, Vipavska Dolina, Slovenia, Sivi Pinot 2017 – Sivi Pinot is Pinot Grigio & this Slovenian PG spent time on the skins for color. This is not your mother’s Pinot Grigio, but is the safest introduction to “orange wine.” You’ll probably even like it. Look for subtle tactile texture compared to rosé & some phenolic bitterness. Traditional Cider: Dupont, Cidre Bouché, Normandy, Brut 2017 – We hope you hope you love this cider [also a benchmark]. You’ll find a much more direct ‘wild’ sourness than American ciders and a touch of dank, wet orchard nuance. Even though it says, ‘Brut’ on the label it’s the drier side of off-dry.

Burgundy on the West Coast, Lineup of 4 Wines, One Package to Sell $129 PURCHASE HERE please visit our website to purchase from our vault to your front door PORTLAND ONLY In the trade for wine buyers, there are not too many more annoying phrases than hearing a sales rep say that the wines they are pouring for you to evaluate are ‘Burgundian in character.’ Ranks right up there with hearing a supplier quote scores. We will not tell you these four AMAZING West Coast wines are like Burgundy. We will tell you that the winemakers, crafting the wines, have tremendous respect for Burgundy, not just for the history and traditions, but for the end result, which often ends up in your glass: elegance, purity, balance. Here’s an offering of two Pinot Noir and two Chardonnay. This lineup includes the cult fav Williams Selyem from Cali. One tasting note: if these wines share any qualities, it would be all four display a balanced richness that we admire greatly. As always, the price for this package is ridiculously wonderful. *Walter Scott 'La Combe Verte' Pinot Noir, Willamette Valley 2018 *Dominio IV 'Imagination Series #9' Chardonnay, Willamette Valley 2014 *Williams Selyem 'Unaoked' Chardonnay, Russian River Valley 2016 *Failla, Pinot Noir, Willamette Valley 2017 Impeccably stored in our vault & ready to impress.
