I love how coffee tricks me into thinking I'm in a good mood for about 27 minutes, ha! Here's another simple breakfast. Of course you could use any yogurt, fruit, nuts or sweetener. I'm using Kite Hill unsweetened plain non-dairy yogurt, blueberries, sliced almonds, and a local honey. I love sleep because it's like a time machine before breakfast! Life is always on the go. Be here, be there, hurry up and wait. It's my golden rule to never ever skip breakfast. This is a one minute breakfast that can be made in a Pyrex bowl then taken to work if rushing out the door. Pour a cup of muesli into a bowl, add fresh fruit, top with milk of your choice, rest 10min and it's ready. @bobsredmill makes a great muesli or you can make your own. To make your own jar of 2 serving muesli, mix 2c old fashioned oats, 1/2 c dried fruit, and 1/2 c coconut flakes.
