SNAP Day 3 (CG): Clearly I was craving Mexican when I was planning my third day. Breakfast burrito, leftover pasta for lunch, Chicken Quesadilla and broccoli for dinner with PB Sandwich, Bell Peppers and an apple for snacks.

SNAP Day 2 for CG: I’m a creature of habit and tend to stick to the same breakfasts. Oatmeal and eggs again for breakfast. Tuna, left over sweet potato and bell pepper for lunch, chicken pasta for dinner and carrots and apple with PB and crackers for snacks. Anyone else use veggies or fruit just to shuttle the PB into your mouth? ;)

SNAP Day1 for CG: I typically eat lunch at work so I literally forgot my lunch until I got out of my complex and down the street. Made the block and came back to get it. Oops. Eggs with sauteed spinach, coffee, milk and blueberry oatmeal for breakfast. Tuna packet with some crackers and carrots for lunch and chicken, sweet potato and broccoli for dinner. Also shown are my snacks: an orange, PB sandwich and banana.

SNAP Challenge Day 2 from Samantha R. Not too hard of a day. For breakfast I had oatmeal which is always a good cheap breakfast. Lunch was cauliflower chicken tacos. The tacos could've been better. Dinner is not pictured because of my dog. It was a 1/2 beef and veggie burger and baked fries. All in all a fairly easy day for the SNAP Challenge. Made it under $4.50 for the day!

Hi !! Christie G here. I’m a little behind in starting my challenge due to a family emergency followed by the not-so-fun sinus funk. While I am completely aware that emergencies and the effects of a sick household don’t change the fact that over 4.5 million Americans rely on SNAP benefits to nourish themselves, I wanted to give this challenge the full attention it deserves.
The above picture is a portion of the foods that I recently bought and I’ll be using as part of my challenge. Not included in this picture are items that I already have in my kitchen. For those items that I didn’t purchase but that I’ll be using the rest of this week, I found currently pricing to include in my final project cost analysis.
For each of my following three days of my abbreviated SNAP Challenge, I’ll provide pictures and the overall cost of my meals for the day as well as my feelings as they pertain to the challenge.
So let’s SNAP to it and get this challenge going!!

Sorry for the late post! Day 1 of Sam R's SNAP Challenge. This is technically from Sunday. Breakfast was homemade banana pancakes. Lunch was taco salad. Dinner was Shrimp grits. The total was less than $4.50 for the portions that I prepared for myself. How I felt about it... those banana pancakes were a 6 out of 10. The taco salad was good. But...i tried the shrimp grits because I found a recipe online. It's not my favorite dinner. I didn't feel deprived though for the day. FYI Aldi grocery store is amazing. Got quite a few fresh veggies for less than $15. Way better value than Kroger.
