The reason why Klingons looked differenf (almost human?) in TOS: the infamous Tribble...

the reason why the Klingons looked different is because the vast majority had no choice but to concieve children with other species (as well as human perhaps their many POW?). The reason why is because of a long and disasterous famine (brought upon by the Tribble, who multiplied to untold numbers and raided nearly all the food storages and growing crops) that ravaged their homeworld pushing many Klingon families to take up piracy (or maybe something with a different name) and invade other planets and passing tradeships and the like. Most Klingon [Pirates] would take partners from among their captives sometimes eventually promoting them to be an active member. If it wasnt done like so, Klingon families would move to other allied or conquered planets and live there. Eventually they find a permanent and effective solution/antivirus to the Tribble and then after many long years finally start to grow more to look and act more Klingon as they were before.

So, in conclusion... the Klingons went almost extinct because of the Tribble and had to resort to interspecies mating for generations, after finally finding/creating a 'cure', they return to their original Klingon looking selves after long years of healing and remembering.
