True love is agreeing to try your wife’s first batch of (maybe slightly sketchy) natto... I was excited to make this for the first time on my own but didn’t get as strong of the classic stringiness as I would have liked. ⠀⠀ The smell of ammonia and earthy taste were all there but the beans may have been a little too dry to produce the proper stringiness that provide the classic mucilaginous texture. If you’ve natto tried it, I’d recommend it, but it’s definitely more of an acquired taste so don’t be surprised if you’re put off by it. Natto is a complete protein and rich in vitamin K. In a nutshell, it’s a superfood, meaning super good for you. And so much for trying to get an extra dramatic effect using black soybeans... Trying to use these uncertain times for creativity in the kitchen... so yesterday I used my oat groat amazake from @kirstenkshockey’s Miso, Tempeh, Natto book and made it into a sourdough porridge loaf. ⠀⠀ I could tell by the shaping stage that it would do well as a sandwich loaf instead of a classic loaf so I shaped it and put it into my loaf pan instead. Sometimes you’ve gotta improvise and listen to your sourdough. After baking, I let it cool overnight before slicing into it. ⠀⠀ It was worth the wait because we had such a moist, soft, slightly sweet with hints of sour bread. Sweat it out! I like to do my vegetable ferments a bit slower if it saves my hands in the long run. Time permitting, I salt the cabbage and vegetables, toss them, and leave them to weep for a few hours before packing them into my crock. Kombucha and jun slug along in our house this time of year but am trying to get them more excited in secondary with some fresh pulpy juice. From left to right: 🥝 pulp/cilantro, fennel/celery infusion, 🥝 pulp, 🥕 pulp and hibiscus, and elderberry/hibiscus/kaffir lime infusion. ⠀⠀ Having fun playing with flavors and direct bottle carbonation vs infusing and straining into bottles in two steps. I love hibiscus for its color infusing properties (more than the actual flavor) and am hoping it will make for a richer, rubier carrot color!
