what is the purpose of sautéing onions for a dish where they will not be a prominent element? example: a vegetable soup or something. they don't take especially long to cook so it's not that, and most recipes only call for them turning translucent so there is no caramelisation going on. i made a chilli in my pressure cooker and just threw the onion straight in raw because i felt lazy and the final result is lovely i'm never going back
