Zoro ㅡ Alcohol is his forte, not yours. It isn't that you're opposed entirely to the idea of drinking, just that you're not as accustomed to it as he is ㅡ and as such, your tolerance for it (especially the stronger stuff) is not the strongest.

"Having fun?" He asks, amused by the flush of pink that's spread across your cheeks and bridge of your nose, the glossy, unfocused quality of your gaze. It'd been a playful challenge from Usopp that even he has higher tolerance than you and now the sharp-shooter is sprawled out a few feet away, fast asleep.

You nod enthusiastically, giggling when Zoro reaches to stop the unsteady bob with his hand. "Man, you're absolutely trashed," he comments. "We need to get you some water before you end up regretting this. Come on."

He reaches for your hand to help you up, steadying the way you sway before leading you towards the kitchen. You're still giggling when he guides you into a seat and retrieves a glass of water for you, pushing it towards you.

"Just how much did you have to drink, anyways?" He asks, reaching to thumb at your cheek affectionately ㅡ and watches you lean into it rather than pulling away. Affection is also far from something you normally indulge in very often, and he can't deny that it's nice to see this side of you.

"Not much," you answer at last, foggy mind finally registering Zoro's question, studying him for a moment. "C'mere." You add the forward curl of your hand to emphasize your words, pouting when he laughs. "I said c'mere!"

"Will you drink that water if I do?" Your head bobbles in a clumsy nod again and he leans forward to comply with your wish, only to blink as you lurch forward to press your lips to his cheek. They're cool and a little sticky, smelling of whatever alcohol you've drank ㅡ but you're on a determined self-imposed mission of peppering his face with kisses. It's a little silly with the way you add a verbal "mwah!" at the end of each one, but it still makes Zoro's own cheeks flush all the same.

"All done," you report when you finally sit back, satisfied with the little marks you've left across his skin, and you reach for the glass of water to drink it, as you'd promised. Zoro is silent for several moments. You won't remember this, he's almost certain ㅡ but now all he can think about is how cute you are when you drink.

Law ㅡ "I think that's enough for tonight." Nimble fingers pluck the half-finished glass of alcohol from your grip, ignoring your pout as he hands it off to Clione, who gladly downs it.

"Spoil-sport," you huff, and Law raises an eyebrow. It's not every day that he gets to witness you acting more like a child than adult, and he'll admit that the way you sulk is amusing.

"You'll thank me in the morning." He reaches for your wrist and gently tugs you up, relying on the fact that the others are in varying stages of inebriation to cover for him being so forward with you in front of the others.

He's already had a drink or two, though he stopped when Ikkaku pointed out that you'd been roped into a drinking game with some of the others. Guiding you to the bathroom, he leans in the doorway to watch you sway as you reluctantly ready yourself for bed, studying your own reddened cheeks in the mirror.

"I could've finished my drink," you tell him petulantly, and he watches you struggle to climb into bed. Another reason he's grateful that no one else will remember much about this evening ㅡ he doesn't need them knowing that it's been months since you last slept in the crew bunkhouse.

"I'm sure you could've, but I'm doing myself a favor when I'm the one who's going to have to look after you when you end up with a hangover." Hat tossed gently to the side, he moves to slip into bed beside you and frowns warily when he finds you eyeing him. "What is it? You're not going to throw up right now, are you?"

You shake your head and lean up, your lips on his cheek before he can ask what you're up to. Slow and a little clumsy, each kiss you press is intentional ㅡ his jaw, his cheeks, the bridge of his nose, his forehead ㅡ and you giggle when you pull away to admire your handiwork. "Now you can't be grumpy," you tell him.

Your own perchance for physical affection is usually on par with his, but it's clear that however many drinks you've had have pushed aside your own personal boundaries.

"Aww, you're blushing!" You crow, and he scowls at the fit of giggles that follows. You're lucky that he loves you, and you're lucky that you're cute.

"Whatever," he grouses, reaching to cover your eyes with a hand. "Go to sleep. And don't puke in my bed, got it?"

Ace ㅡ "See? I told you this was a bad idea."

"Shut up," you groan, venom absent from your tone for the way you're forced to stop walking in order to halt the vicious spin of your head. "I don't drink much, you know that."

"I do," Ace agrees, "which is why I'm telling you it was a bad idea." He pauses, head tilting in thought. "Not gonna lie, it was hot to watch you drink them under the table, though. Who knew you had it in you, huh?"

He waits for you to answer and when you don't, he turns to find you half-way into an alley, emptying the contents of your stomach as quietly as you can. That kind of thing doesn't disgust Ace, however, and he hurries to rub your back until the shuddering heave of your body has stopped. "Feel better?"

"Much," you rasp, fumbling for the strap of your canteen and chugging from it greedily. Ace waits until you're satisfied that you've rinsed your mouth clean before he loops his arm around your waist and continues guiding you back towards the Moby Dick. "Still think I'm hot?"

"Absolutely, babe." Ace's answer is swift and as honest as it always is, which makes your heart do something funny as you turn to look at his side-profile. It doesn't take long for him to notice, his expression somewhere between confusion and concern as you come to a stop. "What is it? Gonna get sick again?"

You shake your head. "No, I just really want to kiss you right now." There's the answering spark of fire from Ace's fingers in response, though you take advantage of his momentary fluster to cup his face between your hands and promptly pepper his face with kisses.

Clustered over his freckles, the tip of his nose, eyebrows and even his eyelids, it's several long moments before you pull away. "There," you say, and Ace wonders if you're sober enough to realize his face has gone roughly the temperature of the sun from your burst of affection. "Come on, I wanna go to bed."

Ace lets you pull him along, still dazed by the lingering warmth of your lips on his skin. He goes to bed without washing his face, eager to soak in this side of you that's far less reserved with your affection ㅡ and when the men of his division point out in the morning that he has your lipstick dotted across his face, all he does is grin.

What I Liked

a great cast of main chars!!! the entire team of wonton insurgency makes me Feel for them, and all of the side chars have their own roles and relationships separate from the leads and i love them all so so much, tbh the platonic relationships in this wn are just as important as the romantic, and that's just so so rare in danmei

the ship itself: sweet gentle doting gong and free-spirited independent powerful shou, dong zheng and cui zuojing behave A Lot differently from tbbf's louchi but they. they lowkey give me louchi vibes. it's gotta be the gong/shou archetype the author went w, which is like... a criminally underused combo. when i say i want more louchi-like dynamics it's this kind of combo that i want.

dong zheng is sweet and gentle and so so sincere in his love, def not the possessive sort of ml. he knows cui zuojing has an agenda, has companions he holds dear, and he just... he just does his best, and he believes in his feelings and also cui zuojing's feelings. sigh i often pitied him in the beginning bc emotion-locked cui zuojing is lowkey a slag shou from a reader's perspective lmao.

i actually have a lot to say abt dong zheng. he's so cute. he's scared of ghosts and isn't afraid to admit it n to cling to cui zuojing. he has Feelings n expresses them straightforwardly, communicates like a mature adult would, y'know. and in the extras, when cui zuojing visits his apartment and sees how hard he's tried to make it homely and nice bc of his wish for a home... like, this guy is the kind of person who could prob live a relatively well-off life considering he's like. molded out of the "domineering ceo w sad childhood" trope except he actually grew up to be reasonable, but he prob wouldn't rly be truly happy until after he met cui zuojing.

and cui zuojing... he's also so interesting. have you ever wondered how someone who got isekai-ed will turn out after they return to the real world? he's basically childe who came out of the abyss. after spending "three years" in the pure white realm, the "real world" has become dull for him. he lives a lonely life after being cursed by "time" and goes back to the world he loves to fight against the fate he hates. he self-proclaims that his heart is too soft, and that's why he locks his feelings up so he can focus on the path of his revenge. love is prob not in the books for him, but he met dong zheng purely by chance, and from seeing him as a useless baggage, slowly grows to become teammates and then lovers. basically. i'm just glad they both met each other.

the worldbuilding... after the first box hamelin there was this description of the pure white realm that just rly captured the atmosphere and aesthetics and i just felt like i would rly rly like this wn then. tbh the entire story reads somewhat more like a shounen if that makes sense? it also lowkey gave me pandora hearts/shugo chara vibes

as a note abt that description of the pure white realm... wow i basically got chills when the description was reprised in the ending, but in wang que's pov as the new queen. while cui zuojing viewed the pure white realm as a returning pilgrim who saw the castle as the endpoint of his journey, wang que saw the realm from the castle, as a new queen. "this was the pure white realm he was familiar with"... and "this was her pure white realm".

it features a cameo from "kuroko tetsuya" which in itself elevates the wn a wee bit more just bc i love kurobas lmao

speaking of, it's p surprising that the cast is? multi-racial? n that everyone r portrayed well without being like super pro-chinese. like chiryuu nana is one of cui zuojing's og teammates (and even after she became the queen's lackey, it wasn't bc of some racist anti-jp sentiment but bc she was genuinely lonely and hopeless), allen is one of the wonton's og teammates n such!! a beloved char!!!!, both heinrich n beverly r fun, victor is ofc a staple, lillian is just chilling at fu zhe's castle, even the onsen proprietress kazama eri was just kinda infodumped as oh she's japanese but the author doesn't rly... go into the specifics of their goods and bads, they're just living in the pure white realm.

I CRIED AT THE ENDING i cried when wang que became queen n made dong linhai forget n when everyone had to leave i cried when victor decided to stay back and cui zuojing went back alone i cried when cui zuojing picked up a new cat who will accompany him in place of uncle im crying writing this afnsddskl

What I Disliked

didn't dig cerberus/fu zhe all that much like i know their story needs wrapping up but i rly wish there more extras on dongcui and not them esp as the last few extra chapters lmao

lowkey the emotional lock feels like forced drama on the topic of "does cui zuojing rly like dong zheng back" like duh ofc he does

some chapter transitions r rly wack, off the top of my head there was the bald soprano arc which just Started Happening n i was like wtf did i miss a chapter????

there r also some arcs that felt draggy altho i feel like it's less bc the subject isn't interesting n more of an "i dont rly care for this" problem (like the gambling abyss lmao didnot care abt cerberus's struggle unfort)

the...climax. or... uh, lack thereof. the final showdown w the queen was p anticlimactic lmao so much for cui zuojing's revenge??? like plotwise everything makes sense, i just wish the execution would've been more epic. tbh everything post fog village n meeting chiryuu nana felt quite rushed.

it's strange, sometimes finishing a good wn leaves me w an empty feeling of post-book depression but iwaol (yes i cantspell) leaves me feeling contented and satisfied and ready to read a new wn instead. not even in the sense of craving something to scratch an itch, it's just... the blissful afterglow of a well-crafted story, of seeing it to the end, of feeling glad that i came across this story and picked it up. it's satisfying is the best way to describe how i feel abt it. there r so many things i like abt iwaol, i'd prob just make separate posts as i go along.

Lime Pickle!

It’s been, and continues to be, very hot here (30 32°C / 90°F) so in the interests of promoting healthful perspiration – but mostly because my current stock of home-made LP is running low (that header photo shows the very last of it, woe) – I’m making some.

My recipe is based on about half a dozen others; mostly leaving out bits I don’t want, like excessively long or multi-stage waiting times, or steps I can ignore since they didn’t have a noticeable effect when I followed them, or even over-spicing.

Yes, really! One on-line recipe wants an entire US cup (250g) of chilli powder! That may be OK with something milder, but what I’ve got is East End Regular and Extra Hot. Even Regular is more than a bit frisky, and Extra Hot is exactly what it says on the packet. I like food that fights back, but I don’t want it to win!

Avengers Ingredients - ASSEMBLE!

1 dozen limes

PICKLE SPICES

4 extra limes for juice 2 Tbsp salt 2 Tbsp chilli powder (2 regular, 1 regular + 1 extra-hot, 2 extra-hot – your choice) 1 Tbsp turmeric powder 1 Tbsp fenugreek powder 1 tsp asafoetida powder 8-10 cloves garlic, finely chopped (about 125g / ½ cup)* 9 cm / 3 inches ginger, finely chopped (about 125g / ½ cup)*

(* I’m sure you could use minced garlic and ginger from jars, but fresh is better.)

OIL TEMPERING SPICES

125 ml / ½ cup vegetable oil 6 dried chillis, torn or snipped small 1 dozen dried curry leaves, torn or snipped small 1 tsp cumin seeds 1 tsp yellow mustard seeds 1 tsp black onion seeds 1 tsp fenugreek seeds *

(*You can use fenugreek powder, as I had to do, however see below.)

Sterilised preserving jars

METHOD

Halve each of the dozen limes top to bottom and, again from top to bottom, cut each half into six slices. Remove any seeds. Put the slices and overflow juice into a glass bowl. Juice the extra limes and add their juice to the bowl along with the rest of the pickle spices.

Mix everything well together, cover and put aside for an hour then uncover, mix again and put aside for another hour.

Heat the vegetable oil in a saucepan and if using seeds, add all the tempering spices. Once the seeds begin to pop enthusiastically, take the saucepan off the heat and lid it to prevent spatter.

NOTE 1: If using fenugreek powder, add it when the seeds have stopped popping. This means the oil has cooled enough that the powder won’t burn.

NOTE 2: if the tempering spices DO burn – you’ll know by the acrid charred smell – throw them out and make a fresh temper. Better to waste some oil and spices than spoil the entire batch of pickle for the sake of false economy.

There are two notions about the oil temper; one says pour it on while still hot, as with a tarka dhal, the other says wait until cold. I prefer using it cold; hot oil hitting cold lime-juice can be a bit dramatic, and any flavour enhancement from the tarka process seems to fade away during the time when the pickle is maturing.

However you decide to do it, add the oil and tempering spices to the limes and pickling spices, mix everything thoroughly and either put it aside for another hour then transfer the pickle to the preserving jars and lid them tightly, or just do it once you finish mixing.

Don’t fill the jars right to the top; leave about 2cm / ½ inch space, enough room for things to move when you give them their daily shake.

Put the jars on a sunny (or at least well day-lit) windowsill and leave them alone – except for a shake once a day to keep things mixing – for at least a fortnight. Longer is better, but two weeks seems to be a reliable time for the lime peel to soften and the flavour to develop.

HINT: when the pickle is ready, purée one jarful using a blender or stick-mixer. (That part-filled jar is the candidate this time.) It won’t have the chunkiness of the whole pickle, but becomes a great ingredient either for zesting up some dish or when combined with yogurt as a salad dressing.

Try puréed pickle mixed with sour cream / mayonnaise and fork-shredded or thin-sliced grilled chicken with a sprinkling of snipped green onion, over some lettuce or other greens and a tomato-sliced-thin on fresh crusty bread. Accompany it with a well-chilled glass of rosé. Or perhaps two...

That’s got a slight nod to Coronation Chicken, but with enough chilli this would be more of a Usurpation Chicken, because it’ll definitely be trying to take over something…

책 내용은 독서 후기로 정리 필요

마스터 알고리즘 인공지능으로 나아가는 마스터 알고리즘이 존재할 것이다 라는 전제하에 각 문파들의 각종 기술과 최고 수준의 필살기를 하나씩 소개하며 끄집어 내는 책. 비개발자를 위한 책이지만 각 알고리즘의 명칭을 들어본 적이 전혀 없다면 이해하기가 쉽지 않음. 이미 알고리즘과 머신러닝에 대해 잘 알고 있다면 재밌게 읽을 수 있다.

불멸의 이론 마찬가지로 재밌게 읽을 수 있는 역사책(?)이다. '베이즈 정리는 어떻게 250년 동안 불확실한 세상을 지배하였는가' 부제가 딱 어울리는 책.

인공지능 현대적 접근방식 가뜩이나 책 내용이 복잡한 수식으로 가득찬 어려운 이론서인데, 번역 또한 이해하고 풀어쓴게 아니라 원문의 직역에 가깝기 때문에 한국어로 읽었을때 도무지 무슨 말인지 이해할 수가 없다. 차라리 원서를 보는 편이 이해가 더 빠르다. 개인적으로 직역은 절대 피해야 한다는 지론을 갖고 있는데 아래에 소개하는 '텐서플로 첫걸음'이 완벽하게 이해하고 의역한 모범 사례를 보여준다면 이 책은 이해하지 못한 상태에서 직역하면 어떻게 되는지를 보여준 나쁜 사례로 볼 수 있다. 안타까운 점이다.

밑바닥부터 시작하는 딥러닝 라이브러리를 사용하지 않고 직접 알고리즘을 구현하며 원리를 설명하는 좋은 책. 실제 서비스에서는 결국 라이브러리를 사용할 수 밖에 없지만 이렇게 원리를 밑바닥 부터 이해해야 제대로 된 서비스 구현이 가능하다.

Building Machine Learning Systems with Python scikit-learn을 이용, 따라하기 식으로 구현하는 머신러닝 책. 딥러닝은 아니지만 머신러닝을 직접 구현해보고 이해하는데 큰 도움이 된다.

텐서플로 첫걸음 바르셀로나의 카탈루냐 공과대학교 교수인 Jordi Torres가 적은 튜토리얼을 번역한 책. 한글로 된 매우 훌륭한 블로그인 텐서플로우 코리아 블로그의 운영자가 직접 번역한 책. 기술을 이해하고 번역한 책이라 그런지 번역이 매우 자연스럽고 번역서 부록인 RNN, LSTM 섹션도 읽을만함. 딥러닝 개념을 이해한 상태에서 텐서플로우 활용법을 처음 접하기에 좋은 책

집단지성 프로그래밍 이 책의 원서는 출간된지 거의 10여년이 지났는데 놀랍게도 랭킹 구현에 딥러닝을 사용하고 있다. 물론 당시에는 딥 하진 않았지만 신경망의 개념을 그대로 사용하고 있고 역전파도 직접 구현했다.

파이썬 라이브러리를 활용한 데이터 분석 데이타 시각화에 관한 책

인공지능, 머신러닝, 딥러닝 입문 번역서가 아닌 빠르게 나온 국내서로 머신러닝의 역사와 개념을 잡는데 도움이 된다. 그러나 본격적인 알고리즘 책도 아니면서 수식을 함께 나열하는 것은 다소 무리수 였다는 생각.

Python Machine Learning 앞서 신경망 섹션에서 소개한 Raschka가 적은 책. 블로그를 참 잘 적는데 책 내용도 깔끔하게 정리되어 있다. 아쉽게도 번역서는 나오지 않았다.

Data Science from Scratch 국내에는 '데이타 과학'이란 이름으로 번역서가 나왔으나 이 책은 원서일때 읽어봐서 번역서의 품질은 확인할 수 없다. 선형대수, 확률, 통계등 이론적 기반을 주로 다룬다.

Artificial Intelligence 깃북에 있는 내용이다 보니 이걸 책으로 분류해야 할 지 문서로 분류해야 할 지 헷갈리는데 다루는 내용이 방대하고 길기 때문에 일단 책으로 분류. 여러가지 개념들을 알기쉽게 상세히 소개하고 있다.

Python Data Science Cookbook 마찬가지로 이론적 기반을 주로 다루고 scikit-learn을 이용해 따라해보는 예제들로 구성되어 있다. 번역서는 나오지 않음.

Think Bayes: Bayesian Statistics Made Simple 온라인에서 전문을 볼 수 있으며 PDF로 전체를 다운로드 할 수 있다. 주로 베이즈를 중심으로 한 이론적 기반을 다루지만 복잡한 수식보다는 파이썬 코드로 쉽게 따라해 볼 수 있는데 중점을 둔 책.

General just a good show stuff: ☑️ main characters so multi-faceted that it’s literally the foundation of the show (and all it's frustrations) ☑️ every secondary char (and there are many) is lovable and/or fascinating in their own way too [tbh I’ve come to love Jean-Butler so much when he was fighting off machines with a broom I was like "not all heroes wear capes miraculous suits” ✊] ☑️ related to above, fleshed out setting that feels realistic (despite how wild the stuff in the show is) by showing many extras, including general city stuff even if usually as brief parts of akuma attacks [justin extra still trying to get smth from the vending machine after it lurched to life is iconic lbr] ☑️ worldbuilding and plot introduced slowly, much of it foreshadowed or only given in a “show, don’t tell” way ☑️ even though one could go into any of the above and more in depth with analysis and speculation, you don’t think about while watching unless doing so consciously, because it’s just fun and engaging to watch!

My Watch Has Ended is brewed with two-row base malt, specialty grains such as oat flakes and chocolate malt, plus maple syrup and fenugreek, an herb with a maple-like aroma and flavor. Hopped with Hallertau Magnum and Styrian Golding varietals and fermented with an English ale yeast, with aromas of sweet maple and caramelized sugar, the beer pours a rich mahogany. Notes of cocoa and toffee and a smooth, velvety mouthfeel finish dry, with gently smoldering roast.

My Watch Has Ended is 8% ABV and makes a superb match for rare, grilled steak. The char pairs with the roasted malt while maple notes play off the sweetness in the meat. The beer is also a fine candidate for sipping before the fireplace as winter arrives.

The beer will be available on draft and in 750 ml bottles at the suggested retail price of $11.99/bottle. After 9PM, when most of Europe and all of South America is just getting started, no one seems interested in rustling you up something tasty. Mr Holmes Bakehouse

If you spot badgers as a pastime, then you have the skills to catch Mr Holmes in the few hours they are open. To be fair, this Mr Holmes is an outpost of the Los Angeles original and their tiny premises serve up unctuous, matcha-iced croissants, doughnuts filled with chilli-lime crème pat and more, between 7AM and 2PM. Maybe go a little later if you are on your own: it’s more lower Nob Hill than Tenderloin  - the epicentre of the City’s crack problem -  but it still doesn’t feel like the safest district to walk around before daybreak.

Chinatown – Old and New

Aside from Sydney, no one does Chinatown like San Francisco. My first experience of it was eating Dim Sum at the City View Restaurant (which, by the way, has no view, of the City or otherwise). We went in intending to order sensibly. Half an hour later we’d gone rogue, stuffing succulent Duck Gyoza into our mouths like Animal the muppet. Newer to the area, China Live on Broadway is a multi-layered emporium of bistro, fine dining and shop. It’s also opposite that 50’s style homage to Psycho, the Royal Pacific Motel, which I intend to stay in someday just for the Instagram creds.

 Not something I normally say about a Chinese restaurant, China Live serves a number of delicious vegetarian dishes.  These include red dumplings stuffed with scallops and peas, together with some imaginative fish and seafood, heroing the Dungeness Crab (seems to be a thing in this City). 

The shop also sold a work of art masquerading as a frying pan which I have been tearing my hair out trying to track down online ever since.

The Food Trucks near Battery Street

If you like Viet, Thai, Indonesian or Malaysian food, then google map these trucks on a Wednesday. The tastiest of them all is The Chairman, serving baked or steamed Bao. Too cool to make an obvious pun of their name and speciality, they let you do the math. 

Their crispy pork belly baked Bao is like a luxe burger and the bao chips with seaweed salt (basically deep-fried wonton wrappers) are the fries you never knew you needed.

Boudin’s Sourdough Factory

Yes, it’s by Fisherman’s Wharf, yes, it’s a tourist trap, but damn it! I love their chewy sourdough. Hollowed out and filled with New England Clam Chowder and a basil and cucumber cocktail on the side, thank you please. I used to be able to buy a loaf at the airport in departures, and it was still tasty when toasted a week later in London.

Clam Sourdough Crostini

It’s the texture of Sourdough that I think is so wonderful – and the way it sponges up the juices of whatever you are cooking. This little number, inspired by a recipe from Harts in Brooklyn, could be served equally well without the clam shells, but the end result wouldn’t look as pretty and scooping out the clam meat at the table at the table is part of the fun. Serves 2-3

Ingredients:

4 tbsp. Olive oil

50g diced pancetta or lardons

4 garlic cloves, 2 sliced 2 left whole

2 banana shallots, finely chopped

½ a fennel bulb, chopped

2 strips lemon zest

1 bay leaf

½ tsp. ground fennel (or smash fennel seeds in a pestle and mortar)

1 glass dry white wine

500g clams

1 tsp chilli flakes

Small bunch parsley, torn

Drizzle of single cream (optional)

2-3 thick slices ideally San Francsico sourdough

How to Make

Heat half the oil in a large frying pan.  Add pancetta or lardons and cook, stirring occasionally, until brown and crisp (around 3-4 mins). Add sliced garlic and cook, stirring, until garlic is golden.  

Reduce heat and add the shopped shallots and fennel. Cook, stirring occasionally, until softened and onion is translucent. Add lemon zest, bay leaf, ground fennel, ½ cup wine and a pinch of salt. Increase heat, stirring occasionally, until wine is mostly reduced but mixture is still reasonably fluid (this should take about 2-3 minutes). Transfer mixture to a medium bowl; discard lemon zest and bay leaf.

Wipe out the frying pan and pop back on the heat. Heat 2 Tbsp. oil until sizzling. Add sourdough slices and griddle golden brown on both sides. Drain on kitchen towels, then cut 1 garlic clove in half and rub one side of each toast with cut side of garlic.

Back to the frying pan for one last time and heat 1 tbsp. oil.   Crush the remaining garlic clove and add to the oil, stirring, until it begins to turn golden. Add clams, the pancetta/ garlic mix and remaining ½ cup wine. Increase heat and bring to a boil. Cook, uncovered, until liquid is reduced by half and clams are open (discard any that do not open), which should take 5–7 minutes. Add a drizzle of cream if desired, together with the chilli flakes and parsley and cook 1 minute longer. Taste and season with kosher salt and more chilli flakes.

Place fried bread on plates and spoon clam mixture and cooking broth over. Drizzle with oil and serve.

Pork Belly Bao

Like I said, food orgasm meets coma once you have eaten a Mr Chairman Bao. Here is my version, using a marinade mix for the pork from China Doll in Sydney.

Makes 10 bao.

Ingredients:

For the Bao dough:

250g plain flour

2 tsp dry active yeast

1 tbsp. Caster sugar

1 tsp kosher salt

100ml tepid water

50ml milk

1 tbsp. sunflower oil

Chopped spring onions and coriander to serve.

For the char siu pork

2 tbsp. sunflower oil

1kilo pork belly, no rind and cut into thick slices

2 tbsp each   dark muscovado and 2 tbsp. light brown sugar

4 garlic cloves, finely chopped

Small piece of ginger, sliced

2 star anise

80 ml hoi sin sauce

100 ml Shaoxing wine

2 tbsp. dark soy sauce

100 ml water

¼ tsp five spice powder

Kosher salt and black pepper.

How to make

First, prepare the pork (you can do this ahead and re-heat).

Heat the oven to 160C, or Gas 3.

Season the pork belly generously, heat the oil and brown the pork in a large pot, in batches. Drain and put to one side.

Mix the hoi sin, Shaoxing wine and dark soy sauce in a jug. Drain the saucepan of oil, then put back on the heat, add the sugar and a little water, and watch closely until it starts to turn to caramel. Working quickly, add the chopped garlic, ginger and star anise, stir then add the soy, Shaoxing and hoi sin mix. Add the pork back to the pan, stir to coat, then add the water and the five-spice powder. Cover and pop into the oven for about 1.5 hours.

Take the pot out of the oven and remove the lid (take care to use oven gloves - don’t forget the lid is hot too). Put it on a hob ring and turn the heat up medium/ high, then stir the pork belly while the sauce bubbles down to a sticky mess. Cover and leave to one side.

If you want everything to be ready at the same time, start making the buns while the pork is in the oven. Tip the flour and sugar into a large mixing bowl, preferably in a free-standing mixer with a dough hook. Add the yeast to one side of the flour and the salt to the other (mixing the salt and yeast too soon prevents the yeast from activating). Then add the water, milk and oil and mix with a dough hook for about 10 minutes, until the mix is smooth and elastic.

Pop the ball of dough into a greased bowl, cover and leave for an hour in a warm place until it has doubled in size.

After an hour, tip the dough onto a floured board, and roll it into a sausage, then cut it into 10 equal portions. Have some squares of baking parchment cut and ready on a lightly oiled baking tray or two. Roll each portion of dough into an oval, lightly oil the flat surface, then lay a greased chopstick across it. 

Flip one side of the dough over the chopstick so you end up with a half-moon shape, then slide the chopstick out and lay the bun on a square of baking parchment. Repeat with the other 9 portions.

Leave the buns, lightly covered, to rise for another hour.

Heat the water in your steamer, and when coming to a rolling boil, add the buns (as many as will fit at a time) cover and steam for 10 minutes. Transfer to a wire rack to cool.

If you cooked the pork much earlier, reheat by adding a cup of water to loosen up the sticky caramel mixture and simmer for about 10 minutes. Transfer the pork to a plate or board and slice up or shred. Chop the spring onions (green stalks included) and roughly chop the coriander.

Spit each bun, fill with sliced/ shredded pork, add some spring onions and coriander and serve.

Turmeric Cake

I have never eaten this in ‘Frisco, but I feel that I should have. It’s almost vegan (properly vegan if you swap the milk for almond milk), has the anti-inflammatory rhizome-du- jour, turmeric, as it’s hero ingredient, and has the taste and texture of a light fudge. This is originally a Syrian delicacy and you can find a version in the Almond Bar cookbook. They also sell a delicious version at Café Pera in Twickenham, which uses coconut oil as its fat. It is a combination of the two on which my recipe is based. Serves 10-12.

Ingredients:

440g fine semolina

100g chickpea flour

60g plain flour

1 tsp baking powder

1 cm piece fresh turmeric, peeled and grated

250g coconut oil, melted then cooled.

385g unrefined caster sugar

375 milk or almond milk

2 tbsp. tahini

1 tsp vanilla essence

Whole blanched almonds, toasted.

How to make

Preheat the oven to 190C/ Gas mark 6.

Rub tahini over the base and sides of a 23cm springform cake tin and put to one side.

Combine the flour, chickpea flour, semolina and baking powder in a large mixing bowl.

In a separate bowl, combine the melted coconut oil, sugar, vanilla, milk, grated turmeric and 60ml water and whisk together. Pour into the dry ingredients and mix until smooth and golden yellow.

Pour the cake mix into the prepared tin and top with the lightly toasted whole almonds. 

Bake for 35-40 minutes, until the cake turns a golden brown, then remove from the oven and leave in the tin for about 10 minutes before turning out carefully onto a wire rack to cool completely. Transfer to a serving plate.

This tin will keep in a tin or wrapped in clingfilm for a week.
