2.皮蛋 Preserved egg - Two beat / 2个

【配料部分｜Side Ingredients】

1.清水 Clean water - One small bowl / 1小碗

2.蒜瓣 Garlic cloves - Moderate / 适量

3.麻油 Sesame oil - Moderate / 适量

4.蚝油 Oyster sauce - Moderate / 适量

5.鸡精 Chicken essence - Moderate / 适量

6.食盐 Salt - Moderate / 适量

7.食用油 Cooking oil - Moderate / 适量 ____________________________

（1）【准备食材的部分｜Preparation Ingredients】

(A)【准备蒜米的部分｜Prepare garlic part】

1.将蒜米切碎 Cut the garlic cloves into rice. ____________________________

(B)【准备苋菜的部分｜Prepare amaranth part】

1.清理苋菜。 Let's manage amaranth.

2.把嫩的苋菜芯和菜枝的部分采摘下来。 Keep the tender parts of amaranth cores.

3.将苋菜以盐和清水清洗。 Wash with salt and clean water. ____________________________

(C)【准备皮蛋的部分｜Prepare preserved egg part】

1. 将皮蛋去壳。 Remove the eggshell.

2,将皮蛋切块。 Cut the egg into cubes or diced.

2.最后，准备1碗清水 Finally, prepare a small bowl of clean water. ____________________________

（2) 【烹饪部分｜Cooking Part】

1.打开电炉,把锅热一热。 Turn on the electric stove to warm up the pan.

2.倒入一些的食用油。 Add some cooking oil.

3.加入蒜米小炒。 Add in garlic rice and stir-fry.

4.放入皮蛋再搅拌。 Stir in preserved egg.

5.同时，加入紫苋菜、清水、适量的蚝油、适量的麻油 和 适量的鸡精。 At the same times,add in purple amaranth,clean water,moderate amount of oyster sauce,moderate amount of sesame oil and moderate amount of chicken essence.

6.搅拌均匀 Then,mix well..

7.最后，煮出浓稠汤汁，方可出锅享用了！ Lastly, cook until the soup become thickens before serving and enjoy your meal! ____________________________

Today is Chinese New Year Eve and family members from near and far gathered together for the most important get-together meal of the entire year – The Reunion Dinner (团圆饭/年夜饭/团年饭). Now that the restriction for the max number of diners at a table had been lifted, we are back to Xing Hua Delights (回味轩兴化菜馆) for the get-together.

We started the meal with a small serving of Thai Style Bean Curd (泰式豆腐). Crispy on the outside and silky soft inside, the warm tofu is topped with julienned cucumber, carrot and onion with a spicy sweet and sour sauce over it. It is a refreshing appetizer to open up the palate.

Next up, the Amaranth Soup (上汤苋菜) in a milky broth of three different kinds of egg – chicken egg, salted duck egg and century egg (皮蛋). The homey soup and vegetable is well liked by everyone around the table.

And for the carnivores, the boneless Pork Ribs Deluxe (排骨王) with sprinkle of sesame seeds. It is succulent and sweetish with hints of tanginess. Here is another tofu dish, the Homemade Salted Egg Crispy Tofu (自制咸蛋脆皮豆腐). Love that fragrant savoury salted egg yolk sauce clinging to the golden brown deep-fried bean curd and seafood paste parcels.

Sister-in-law wanted this Salted Egg Chicken (咸蛋鸡) so we ordered a small portion. Sis commented that it was a little dry but I like the fragrant sauce and it went well with the rice.
