Pat Hinds is on a mission to “bring the flava of Guyana to the UK and the world”. His range of Pat & Pinky’s chilli-based sauces, chutneys and condiments is already going down a storm everywhere, from Catford Food Market to shops like Hop Burns & Black in Deptford to the City.
“Not many people know about Guyanese food but it is so tasty”, says Pat when we meet up on a Wednesday lunchtime at Catford Mews.
“There’s this amazing fruity and spicy round, red chilli called the wiri wiri that no one outside Guyana really knows about, so I decided to use it as the basis of Pat & Pinky’s and bring it to a wider audience.
“Whenever anyone goes to Guyana friends and family always ask them to bring wiri wiri back with them in their suitcase.”
In 1959 Pat’s parents Desmond and Barbara moved from Guyana to London and settled in Crofton Park, where Pat and his sister Yvette were born and grew up.
“My dad found work as a postman and my mum began as a seamstress on Brick Lane before working in admin for the Ministry of Defence”, he says.
The family made regular trips back to Guyana whenever they could.
“My parents wanted us to see where they came from and where they were born so I’ve been going out there since I was 18 months old.”
Over the last few years Pat has spent more time in Guyana, staying with his dad, who moved back when he retired.
“While I was there it dawned on me just how special Guyanese food is and that I should do something to let everyone in the UK know about it,” he says.
“Guyana is a unique place with people coming from all over the world and food is the glue that brings everyone together. There’s Amerindian, African, Indian, Chinese, Portuguese and European and it’s not strange to have a mix of these cultures on one plate.”
Pat worked in insurance in the City and then ran his own company that created T-shirts and merchandise for bands and brands before coming up with the idea for Pat & Pinky’s.
His mum, who died when he was 20, is very much the inspiration for his new food venture. “Everyone called her Pinky because of her fair skin and rosy cheeks”, he explains.
“My mum was one of the most amazing women I have ever met and the best cook.
“When she passed away I realised I didn’t know how to cook but I found it easy. Now when I am creating recipes for Pat & Pinky’s, Mum just sends the flavours to me.”
Pat imports the chillies, herbs and spices he uses direct from farms in Guyana and makes up the products at a small factory in Portsmouth.
The Pat & Pinky’s range includes a wiri wiri pepper sauce with the much-loved chillies as well as thyme and green mango.
There’s also a hotter scorpion Moruga sauce, a sweet and sticky hickory smoked BBQ sauce and a Dark and Stormy hot sauce made using Guyana’s famous El Dorado rum.
“All the sauces can be used as condiments or as an ingredient or marinade to give a dish more flavour”, says Pat.
Other products include chilli oil, cold-pressed coconut oil and a dry rub.
“The coconut oil is great for cooking – and you can use it on your skin too!” says Pat. “The dry rub is an all-purpose seasoning that makes everything taste magical, from roast potatoes to meat and fish and veg.”
As well as tasting good, Pat was determined that his products would look good too – and drew inspiration on this front from his parents.
“My mother and father always looked very stylish,” he explains. “My mum would go into Selfridges on a Saturday morning and see a dress she liked. She’d then come home and cut and sew it ready for a party that night. She always looked fabulous.
“Our bottles look so good you want to have them out on show rather than hidden away at the back of a cupboard.
“We have incorporated the black, white, red, yellow and green from the Guyanese flag into the design but we have done it in a subtle way.”
Pat launched Pat & Pinky’s in March 2019 and started supplying numerous local shops in south-east London, including Jones of Brockley, The Proud Sow in Crofton Park and Dulwich Village and Hop Burns & Black in Deptford and East Dulwich.
In the summer he was offered a stall at Catford Food Market and its popular vegan festival, where he says Pat & Pinky’s “totally smashed it”.
“Everyone loved the taste and the depth of flavour and also the story behind it. We didn’t set out to make it vegan, it just happened”, Pat reveals.
“It was actually our packaging designer who noticed that all our ingredients were vegan and said that we should let people know, so now we do.
“Everything is also gluten free and we don’t use any artificial colours, preservatives or flavouring either.”
At the vegan festival, Toby Allen, who runs Brockley Market, approached Pat and invited him to take a stall at his Saturday food and drink market.
“He loved the idea of Pat & Pinky’s and said he wanted to help. I thought someone had to die before you got a space at Brockley Market but we were there the following week and have been there ever since”, says Pat.
They have also started doing lunchtime pop-ups at the so-called Cheesegrater building on Leadenhall Street in the City.
“Wherever we go people love what we do”, says Pat.
Pat’s been approached by a number of other food markets and is in the process of recruiting more staff to help him.
“Friends and family have been great but we do need more people now. They don’t have to be Guyanese, but they do have to be passionate about food and what we are doing”, he says.
It’s still early days for Pat & Pinky’s but Pat is gradually adding to his range of products.
He has been taste-testing chilli chutneys on customers and they can’t seem to get enough of them.
“Our products are very much a fusion of things I like and we have done all sorts of different ones including watermelon and mango and aubergine and strawberry,” says Pat.
“The one that is proving the biggest hit though is our aubergine and plantain. We only did a small batch initially and people keep asking when we will have more.”
Pat is keen to take Pat & Pinky’s to a much wider audience.
“I’ve already done a couple of pilot videos showing people how to cook with our products and I’d love to be on TV telling people about Guyanese food. There are a few people online like the Alica’s Pepperpot and Metemgee blogs in America but no one else.
“Our plan is to be the biggest Caribbean fine food and drink brand to come out of Guyana and the UK”, he declares.
And Pinky is very much there guiding everything he does.
“Mum runs this from above”, smiles Pat.
