Preparation and cooking
- First take some water in a bowl and make a mixture with 2 toss sugar, 1 tsp salt, 3 toss oil, 1 egg, 250 ml milk in the water.Make sure that the sugar melts. - Then add flour to the mixture and knead it to make a dough. - When the dough is ready, put some oil in it and cover it with a cloth for 20 minutes. - After 20 minutes, divide the dough in 5 equal portions. - Roll a portion of the dough into a 175 mm . (7") diameter circle without using any flour for rolling . - After that, heat the Indian frying pan grease it with 2 tbsp oil ,place the roll circle on it and cook using 1 tsp of oil till it's turns brown Spot apear on both sides. - Reapet previous steps to make other rotis .keep aside . - Break the egg in a bowl and add salt, pepper and beat it well with a fork. - Now pour 1 tsp of oil and heat it, when the oil is hot, pour the egg on it and put a fried roti on top of the egg. - Now fry the roti with egg well and then keep it in a bowl.
Serving process
- Now add lemon juice, black salt powder then add sliced ​​onion, sliced ​​cocumber , a little chilli chopped on the roti. - Then add tomato sauce, add chili sauce. - After that, roll the roti on paper and serve immediately.

Method of making dosa:- First of all take the rice in a bowl and wash it well and grind it without water for
1 minute by putting it in a mixie jar.
2. Then add water to it and grind it for 1 minute. (If the rice is not grinded well, then grind it for some more time)
3. Grind urad dal and fenugreek seeds in the same way (first without water and then after adding water).
4. Here we have grinded both the batters and taken them in a big vessel.
5. And add one spoon of sugar, semolina and 1/2 cup curd to it and mix it.
6. Then mix it well and leave it covered for 5 minutes.
Till then we will make Chokha….
7. For that put a pan on the gas and pour oil in it. Then put Rai Chana Dal and Urad Dal in it and cook it for 2 minutes.
8. Then put almonds, peas and onions in it and cook it only till the color changes (do not turn red after roasting).
9. Then add turmeric, red chili, coriander powder and mango powder and mix it.
10. Then put some water in it and add salt and cook for a while.
11. Then break the potatoes and put them in it and cook them.
12. And our sharpener is ready.
13. Now we will put one spoon of baking powder in the batter and mix it well. (Here we do not have to use baking soda, only baking powder.)
14. Then heat the non stick pan completely on the gas. And when it gets hot, apply a splash of water on it and wipe it with a cotton cloth.
15. Then pour the batter in the center of the griddle and spread it thinly.
16. Then make the gas medium and pour it till the top of the dosa.
17. After the dosa is cooked, you will see that the dosa has started leaving the sides.
18. If you want to eat plain dosa, then remove morkar from it and your plain dosa is ready.
19. For masala dosa, put the chopha on the doda and then take out the dosa after moring it.

Now it can be served with chutney, sambar or vegetable.

Suggestion:- When you grind rice, grind it in a small jar so that your rice will grind quickly. It is very important to add curd in the dosa batter. We do not have to use baking soda in the batter, only baking powder. Mango pickle is a traditional Indian condiment made with raw mangoes, spices and oil. In India, pickles are relished as a side in every meal. It is eaten with dal-rice, dal-roti, parathas & even with many breakfast dishes. Indian cuisine is diverse so a mango pickle is made in many different ways. I am sharing the easiest recipe to make it at home.
Mango pickle
Mango pickle is a Indian pickle variety made with raw unripe green mangoes, pickling spices and oil. Aam chunda, Punjabi aam ka achar, Rajasthani aam ka achar, mavinakayi uppinakayi, Maagaya, Avakaya & Vadu mango pickle are some of the most well known mango pickle varieties made in India.
Traditionally, chopped mangoes are pickled with the spices and oil in large ceramic pots known as bharani or barni. The ingredients ferment as the mango pickle ages and develops tons of flavor and deliciousness.
Avakaya is one of the popular variety of pickle made in Andhra pradesh, a South Indian state which is immensely known for hot and spicy foods. This mango pickle is a similar but toned down version which is also simpler to make.
Recipe
1.This step is for better shelf-life. If you skip this step, you have to refrigerate the pickle right away after making it. To make mango pickle, firstly make sure all the following are completely dry and free from moisture. It is ideal to sun dry all of them for a few hours. If you do not have sunlight, then wipe with a clean dry cloth and keep them in a dry place the previous night.
1 mixing bowl
2 large spoon
1 small blender jar (or spice jar)
1 chopping board
2 knives (1 small & 1 large)
work area (has to be super clean and dry)
2. Dry roast half teaspoon methi seeds on a low flame till they begin to smell good. Transfer these to a plate. To the same hot pan, add 3 tablespoons oil and allow it to warm up. Set aside to cool completely. You can skip warming the oil if you intend to finish it with in 10 to 12 days. If using cold pressed oil, skip heating the oil.
3. Powder 1 tablespoon mustard seeds and ½ teaspoon roasted methi seeds in a blender to a fine or coarse powder to suit your liking. A fine powder needs less oil for the pickle.
4. Wash 1 large mango (or 2 medium) well under running water. I prefer to soak mango in salted water for 30 minutes, scrub it with additional salt and wash off. If you are using organic mango, you can just wash it well and use. Dry it thoroughly. Wipe off with an absorbent cloth or tissue.
5. Chop them to slightly large cubes of 1 by 1 inch. Smaller pieces tend to turn very soft and mushy when stored for longer. Also I used up the left over pulp on the mango. I finely chopped it as well. They turn soft and add volume to the pickle gravy.

Mix well and with the help of water, knead a smooth dough. Keep the dough aside for 15-20 minutes to settle down.Divide the dough into 8 equal portions or balls..
Take one medium sized ball of the dough and roll into medium sized roti, just like we make Indian Chapati.Heat a flat griddle or tawa, drizzle few drops of oil and place the rolled out roti on it..
Cook the paratha over medium high flame for about 2 minutes from one side and then flip over.Drizzle few drops of oil and cook the paratha from both sides till it is well cooked and little brown spots are appeared on both sides. Now parathas are ready, keep them aside..
Procedure for making alu jeera, take a pan and add oil in it. Heat it over medium flame. Once the oil is sufficiently hot, add the cumin seeds and fry for a minute. Once the cumin seeds start to splutter, add the green chillies, ginger and curry leaves. Fry the ingredients for 30 seconds and then add the chopped potatoes..
After a minute or so, add salt and turmeric powder. Mix the ingredients well and cover the pan with a lid. Reduce flame to low and cook the dish for 4 to 5 minutes. Make sure that you stir once or twice in between till well combined. Once the potatoes are properly cooked, transfer the dish in a serving bowl . Now it's time to assemble this rolls..
Now place some alu jeera stufing in the middle of the cooked methi parathas. Top it with sliced onions(optionsl) followed by ketchup. Wrap up the lower portion of the roll using an aluminium foil,  to hold it together. Now it's ready! Enjoy this yumminess..

Oats are a kind of cereal grain from the plants family. The grain refers specifically to the edible seeds of oat grass, which ends up in the breakfast bowls. Whether hated or loved for their mushy texture after getting cooked, oats are known the best for their health benefits and nutritional value. Oat is also best for someone trying to lose weight and control hunger levels because of its soluble fiber content and high water.
The ingredient is rich in phosphorous, fiber, magnesium, thiamine, and zinc. 
Health and oats
Oats comprise various components that exert health benefits. The primary type of fiber in oats is beta-glucan, which helps to slow digestion, suppress appetite, and increase satiety. The entire oats also contain plant chemicals known as phytoestrogens and phenolic compounds that work as antioxidants to reduce the damaging effects of chronic inflammation associated with diseases such as diabetes and cardiovascular disease. 
As the research about oats is limited, most of the studies below assessed the intake of whole grains, which comprised of several grains in addition to oats. Therefore, everything cannot be applied to only oats.
Diabetes
Beta-gluten fiber helps to prevent the increase in insulin levels and blood sugar after having a meal and might benefit gut health as the fiber is fermented and broken down by the bacteria present in the intestines. Though a food rich in carbohydrates, minimally processed whole grain oats can be included in a diet of an individual having diabetes.

Oats are connected with heart health benefits, but the research has shown different types of benefits. Oats are also delicious in savory dishes. An example is replacing rice in risotto with whole oat groats or steel-cut oats. Typically, the oats are first toasted for a few minutes in hot oil with aromatics like shallots or diced onion. Then stock and/or water are added, 1 cup at a time, stirring well after each addition, until the oats are cooked.
4-     Oats Omelette

5-     Oatmeal

These are oats that have been ground to a flour-like consistency. Although it may be tempting to substitute oat flour for regular flour in baked recipes, keep in mind that oat flour lacks gluten, a crucial component that adds structure, moisture, and volume to a baked product; without it, cookies would crumble and bread would become dense and lack volume. However, oat flour can add chewiness to cookies and a boost of nutrients to bread. Substitute 25-30% of the flour in a recipe with oat flour for best results.
7-     Overnight oats
It is a quick, easy no-cook solution for a nutrient-dense breakfast or snack. In a medium glass jar, add ½ cup old-fashioned or rolled oats (not instant), ½-1 cup liquid such as dairy milk, soy milk, or nut milk, and ½ cup of any chopped fruit (banana, melon, apple, grapes). Additional optional ingredients include a few tablespoons of Greek yogurt, 1-2 tablespoons of chia/flaxseeds, nuts, or any spices. Tightly screw on the lid and shake the jar vigorously until all ingredients are incorporated well. Refrigerate overnight or for at least four hours. The oats will soften and the mixture will thicken into a pudding-like texture.
8-     Coconut oats
It’s a quick recipe that can be made in breakfast using fresh coconut, rolled oats, and usual spices. Serve it with curd. It is the same as South Indian coconut rice.
Pure oats are gluten-free but most commercial brands are processed in facilities that also produce gluten-containing wheat, rye, and barley. Cross-contamination can also occur if oats are grown too close to wheat crops. If there is cross-contamination of gluten in an oat product, it is difficult to know exactly how much. The Food and Drug Administration allows the voluntary use of the regulated term “gluten-free” to refer to products that contain less than 20 parts per million (ppm) of gluten. Because the term is voluntary, some brands of oats may be gluten-free although not labeled as such. However, those who have celiac disease or gluten sensitivity may wish to choose oats specifically labeled “gluten-free.”

Ingredients
4-5 florets of cauliflower, medium chopped
1/3 bottle gourd, medium chopped
1/2 onion, medium chopped
Small tomato, medium chopped
1 tablespoon sambhar powder
1/2 tablespoon turmeric powder
Salt to taste
1 teaspoon mustard seeds
4-5 curry leaves
2 tablespoon olive oil or coconut oil
A pinch of asafetida
Instructions
·         Heat a pressure cooker for about 5-10 minutes and then add 2 tablespoons of olive oil.
·         When coconut or olive oil is well heated add mustard seeds and keep stirring until seeds start spluttering.
·         Immediately add curry leaves and asafetida.
·         The first vegetable should always be onion. Sauté it for 1 minute.
·         Add all your low carbohydrate and high protein vegetables which you have already chopped.
·         Add sambhar powder, salt, turmeric powder and water.
·         Close the lid and let it cook for 2 whistles. It will take you 30 minutes to cook the dish if preparation is done beforehand.
·         Serve it hot with rice, idli, dosa, vada or anything you like.
2.     Keto medu vada
Medu vada is like a salty doughnut made up of pulses and fried in oil. It is generally served with either coconut chutney or sambhar.
To make a healthy Keto medu vada, it is necessary to substitute the unhealthy ingredients. The South Indian keto diet needs to be flavorsome as well. This keto diet can help you satisfy your taste buds.
The exterior of the vada is crispier whereas the interior of it is very soft.
Ingredients
1 cup almond flour
½ cup coconut flour
2 teaspoon xanthan gum
1 tablespoon psyllium husk
Peppercorns, crushed
1 teaspoon ginger, finely chopped
2 teaspoon of green chilies, finely chopped
Coriander leaves, finely chopped
A teaspoon Cumin seeds
A teaspoon baking powder
Water
Olive oil or coconut oil
Instructions
·         Take a bowl and add almond flour, coconut flour, xanthum gum, salt and baking powder.
·         Mix it thoroughly.
·         Add ginger, green chili, peppercorns, cumin seeds and coriander leaves. Mix it again.
·         Add a little water and try to make it soft dough.
·         Brush a little olive oil and cover it with a cloth. Leave it for 10-15 minutes.
·         Take a small portion of the dough and flatten it.
·         Make a hole with your finger just like in doughnuts.
·         Heat the pan and add oil in it.
·         Fry this dough.
·         Ready to serve with either keto sambhar or keto chutney.

3.     Keto dosa
Dosa is like a main dish of South Indian but is made up of both rice and pulse. It has a very high carbohydrate amount if taken more than two at a time.
In this keto recipe of south indian keto diet, high calorie ingredients have been changed to low carbohydrate ones. Each serving has 4 gram of carbohydrates.
Ingredients
½ cup almond flour
3 tablespoons shredded low fat cheese
½ cup coconut milk
½ teaspoon cumin, grounded
½ teaspoon coriander seeds, grounded
Salt to taste
 Olive oil or coconut oil
Instructions
·         First step should be to take a bowl and mix all the ingredients and make a smooth batter.
·         Let it settle down for 7-10 minutes.
·         Heat up a non stick skillet.
·         Pour the batter and spread it using a spatula or by moving the pan. Use a little olive oil or coconut oil if the pan is not non-stick.
·         Let the dosa cook on low heat until it turns crisp.
·         Once the one side of the dosa has turned golden brown, fold the dosa and it is ready.
·         Serve it hot with either keto sambhar or keto coconut chutney.
4.     Keto idli
Idli is a light snack, generally eaten as a breakfast meal. It is also made up of rice and pulses fermented in a bowl. The keto idli is made with little substitutes.
Keto idli will take approximately 30 minutes to get ready. In a south indian cuisine, keto idli is made in a very different way so that it can be followed in a keto diet.
Ingredients
1 cup coconut flour
2 cup paneer
20 gram psyllium husk
1 teaspoon baking powder
4 tablespoon olive or coconut oil
2 teaspoon curd
Salt to taste
Water as required
 Olive oil
Instructions
·         In a grinder, add coconut flour, psyllium husk, baking powder and salt. Mix it once.
·         Add paneer, olive oil and curd. Grind it again.
·         If it feels a little hard, add a little water and make it soft.
·         Take small parts of dough and divide it into circular portions.
·         Flatten the dough a bit and brush them with a little oil.
·         Put the dough in a microwave idli container and steam for three minutes.
·         Serve it hot with keto chutney or keto sambhar.
5.     Keto appam/appe
Appam is generally made with fermented rice batter. They are very common in south India and can even be found in little stalls as a street food. Appam are like pancakes for South Indian people, eaten with chutney.
It is generally eaten for breakfast. Here, rice has been substituted with the grated cabbage.
Rice can be very unhealthy and disbalances the digestive system. To make south indian keto diet healthy and without rice, it is beneficial to substitute rice.
Ingredients
200 gram cabbage, grated
150 gram paneer
½ teaspoon ginger, finely chopped
1 teaspoon green chilies, chopped
½ teaspoon turmeric powder
½ teaspoon red chili powder
1 tablespoon curd
1 teaspoon lemon juice
½ teaspoon baking soda
Salt to taste
2 tablespoon olive oil or coconut oil
Instructions
·         In a bowl, add grated cabbage and salt. Mix it well.
·         Keep it aside for at least five minutes.
·         Squeeze out the excess water by putting the mixture in a cloth.
·         Add the cabbage mixture in a bowl.
·         Add all the ingredients and keep mixing it.
·         It will form dough of medium consistency.
·         Take small portions of dough and roll it into balls.
·         Heat the appam pan and brush it with olive oil
·         Put the balls in the cavities and brush the top with the olive oil.
·         Keep tossing the appam with the help of spoons.
·         Serve it hot with green chutney or keto chutney.

2 cups room temperature water
1 cup hot water
2 tablespoon tamarind

½ teaspoon cumin powder
½ teaspoon red chili
½ teaspoon pepper

Curry leaves
Dried red chilies
½ teaspoon cumin seeds
½ teaspoon mustard seeds

·         In a hot cup of water, soak tamarind for 30 minutes.
·         Strain the mixture and mesh the tamarind with the spoon so that the water is sieved through the strainer into a bowl.
·         Mix coriander powder, cumin powder, red chili, pepper, turmeric and asafetida to form a spice mixture.
·         Heat olive oil in a deep pan.
·         Add red chili, fenugreek, mustard seeds and cumin seeds. Sauté it.
·         Add curry leaves and again sauté it.
·         Add the tamarind water you strained in the first step. Add two more cups of water.

·         Let the rassam heat and simmer.
·         Add coconut milk and keep stirring it. A little tip, do not let it boil.

·         To the spice mixture add shredded coconut and sesame seeds. Continue roasting until the coconut turns golden brown.
·         Let it cool. Then grind the spices. After grinding, keep aside 2-3 teaspoon of mixture for the cauliflower rice
·         Heat the olive oil in a deep skillet. Add mustard seeds, cumin seeds.
·         Add onions and sauté for 3-4 minutes.
·         Add curry leaves and green chili. Stir it for about 20-30 seconds.
·         Add eggplants and turmeric in the skillet. Sauté for at least 5 minutes.
·         Add cauliflower rice, tomato, spice mixture. Mix everything and let it cook for about 10 minutes.
·         Roast cashews a bit and add it to the skillet.
·         Add coriander leaves and coconut to the skillet.
9.     Keto adai
Adai is also a dosa like dish which is made of lentils and drumstick flour. It is healthy and protein rich.
It is a famous Tamil cuisine. The coconut flour and olive oil makes it a healthier keto recipe.
Ingredients
200 gram paneer
2 tablespoon coconut flour
1 tablespoon psyllium husk
2 tablespoon yogurt
½ teaspoon turmeric powder
A pinch of red chili

Crispy Masala Dosa Recipe
Masala Dosa, a slender and fresh South Indian crepe produced using rice and dal player, has acquired its space on the worldwide food map. In contrast to paper or sada dosa, masala dosa contains a fiery and sweet-smelling stuffing (aloo masala) made with bubbled or squashed potato, onion, and flavors in the middle of slim moved plain dosa.
 If you are looking for something light, healthy yet filling, then follow this recipe to cook masala dosa at home and serve it as a morning breakfast or also as an evening snack with coconut chutney and sambar.
 INGREDIENTS
 Dosa Batter
•  3/4 cup sona masoori rice or any raw or regular rice, 150 grams
•  3/4 cup idli rice parboiled rice, 160 grams
•  1/2 cup urad dal gota 100 grams, dehusked whole urad dal or you can use urad dal dhuli (split urad dal)
•  1 tablespoon chana dal 18 grams
•  1 tablespoon toor dal 18 grams
•  1/2 teaspoon methi seeds fenugreek seeds
•  3 tablespoons poha flattened rice, 18 grams, soaked 20 to 30 minutes before grinding
•  1 teaspoon rock salt non-iodide
•  ghee or oil to cook the dosa
 Potato Masala
•  4 medium potatoes 425 grams, boiled and mashed
•  1 tablespoon oil 15 ml
•  1/2 teaspoon mustard seeds
•  1/4 teaspoon hing asafoetida
•  1 teaspoon chana dal soaked for 10 minutes in water
•  5-6 cashews broken
•  1 teaspoon chopped ginger
•  1 medium onion sliced
•  1-2 green chilies chopped, adjust to taste
•  10-15 curry leaves
•  1/2 teaspoon turmeric powder
•  1/2 teaspoon salt or to taste
•  cilantro to garnish
 INSTRUCTIONS
 Make the batter
• Take a big bowl add sona masoori rice, idli rice, urad dal gota, chana dal, toor dal, and methi seeds.
 • Rinse everything and absorb around 5 cups of water for 5 to 6 hours.
 • Soak poha in 1/2 cup water 20 to 30 minutes prior to crushing the batter.
 • Drain water from the rice, dals, and, poha and move everything to a blender.
 • Add around 1 and 1/4 cups (10 oz/300 ml) + 1-2 tablespoons (15-30 ml) cold water or varying to make the batter paste.
 • The measure of water required will rely upon the sort of rice/dal you use, so it may change. So start with a lesser sum and change likewise.
 • Now, move the batter to the steel bowl of your Instant Pot.
 • Add 1 teaspoon of rock salt (sendha namak) to the batter. Try not to utilize normal iodine salt here.

1.In a kadai, add oil and heat. Now, add the grated ginger and saute.
2.Then, add the chopped onions and stir-fry till translucent.
3.Now, add the turmeric powder, coriander powder, jeera powder, red chilli powder and amchoor powder and stir-fry quickly.
4.Just add a few teaspoons of water to the above powder so that everything is de-glazed.
5.Now, add the chopped tomatoes and cook everything together. Add crumbled paneer and toss and mix everything well. Add salt.

4.Make sure the stuffing should not come out, for that seal the sides with some water on the edges so the stuffing does not come out.
5.Heat a tawa and drizzle few drops of oil.
6.Place the stuffed parantha gently on the tawa and roast it from both sides by greasing it with oil or ghee.
7.Serve hot with curd and pickle of your choice.
