Autumn (best aesthetic) has lots of apples/pumpkins/carrots/broccoli etc. However, that means that in Spring, few things would ever grow into season except maybe like new potatoes and radishes. Summer would have foods that thrive in the heat like coconut and passion fruit. They'd also be exploring their ocean, bringing in lots of fish and sea food.
If the Winter Court is truly just like a frozen wasteland then they surely cannot grow really anything and must haemorrhage money by constantly importing foods. I imagine them just fishing and living off dried/salted fish or meat. Courts could cease importing food or charge ridiculously high prices and the court would crumble.
I don't think SJM thought too deeply on the economic side of Feyre dismantling the Spring Court. Rhys is just wealthy and we don't really hear anything about imports/exports between courts. I know I wanted to write about it in AU ACOSF but can't actually remember if I delved into it other than Nesta allowing access to a port to the Continent in Spring for Dawn.
