A delightful twist on classic marshmallows inspired by the flavors of Samoa cookies - toasted coconut, caramel, and chocolate, perfect for making s'mores with a tropical twist.
Ingredients: 3 cups granulated sugar. 1 cup water. 1 tablespoon corn syrup. 3 packets unflavored gelatin. 1/4 cup cold water. 1/2 cup shredded coconut toasted. 1/4 cup caramel sauce. 1/4 cup chocolate chips. 1/4 cup crushed graham crackers. Powdered sugar for dusting.
Instructions: In a saucepan, combine granulated sugar, 1 cup water, and corn syrup. Heat over medium-high heat, stirring until the sugar is dissolved. Once the sugar is dissolved, stop stirring and insert a candy thermometer. Heat the mixture until it reaches 240F 115C, then remove it from the heat. While the sugar mixture is heating, in a separate bowl, sprinkle the gelatin over 1/4 cup of cold water. Let it sit for about 5 minutes to bloom. Once the sugar mixture reaches 240F 115C, pour it slowly into the bloomed gelatin, stirring continuously until well combined. Using a stand mixer with a whisk attachment, whip the mixture on high speed for 10-12 minutes, or until it becomes thick, glossy, and stiff peaks form. Incorporate the toasted shredded coconut into the marshmallow mixture by folding it gently. Pour half of the marshmallow mixture into a greased 9x9-inch baking pan and spread it evenly. Drizzle half of the caramel sauce and half of the chocolate chips over the marshmallow layer. Pour the remaining marshmallow mixture on top and spread it evenly over the caramel and chocolate layer. Drizzle the remaining caramel sauce and chocolate chips over the top and sprinkle crushed graham crackers. Allow the marshmallow to set for at least 4 hours or overnight. Once set, dust a clean surface with powdered sugar and turn the marshmallow out onto it. Cut the marshmallow into squares or use cookie cutters to create desired shapes. Enjoy your Samoa S'mores Marshmallows!
