2 Festive Butters To Transform Your Christmas Feast!

We have two scrumptious flavoured butters that will become the stars of show at your Christmas dinner feast this year. One savoury, one sweet and both totally delicious!  Sprouts will take on a whole new league of their own smothered in our amazing Chestnut and Bacon Butter and we’re also sharing a super easy recipe for a lovely Festive Brandy Butter which is perfect served over a warm Christmas pudding or smeared over mince pies!
Ok, so butter isn’t the healthiest but as a one off, special treat at Christmas time I think we’re all allowed to indulge in a little sweet or savoury infused butter. Our Fabulous Festive Butters are delicious and guaranteed to please.
These recipes could not get any easier, they take no time at all to prepare and trust me, they’re so good that you may find that serving these festive butters at Christmas time will become a family tradition.
Festive Brandy Butter.
Ingredients
115g Unsalted butter – room temp
115g Soft brown sugar
4 Tbsps brandy or rum.
Method;
Using a medium sized mixing bowl and wooden spoon beat the butter until soft and creamy.
Add the brown sugar and cream together until smooth.
Gradually beat in the liquor of choice until well combined.

Chestnut & Bacon Butter.
Ingredients;
115g Unsalted butter – room temp
5 Rashers streaky bacon
90g Vac packed chestnuts – quartered
Black pepper
Method;
In a dry, hot pan (no oil required) fry the bacon for 5-10 mins until crisp.
Add chestnuts to the pan and fry until they are beginning to colour slightly.
Drain the bacon and chestnuts and discard any excess fat. Set aside to cool.
Using a medium sized mixing bowl and wooden spoon beat butter until soft and creamy.
Chop the bacon into small pieces and then add the bacon and chestnuts and a little black pepper to the butter, mix well.

Storage of Flavoured Butters;
Simply store in an airtight container in the fridge or freezer. Alternatively follow our steps below to create individual butter portions. Individual portions works brilliantly as you can take out portions as you need them.
Pop the butter in fridge to firm up a little, 30 minutes or so then tip the butter onto a square of baking parchment or cling film.
Roll the butter to form a sausage shape, then twist the ends to seal.
Place in the freezer for 30 mins – 1 hour or until firmer but not completely frozen. Remove the butter from freezer, open the package and slice the butter into discs approx 1-2 cm wide.
Re-wrap the sliced butter sausage and place into a freezer bag.
Butter can be stored for up to 3 days in the fridge or up to a month in the freezer.
