Ingredients: 8 oz pasta. 2 tbsp butter. 4 cloves garlic, minced. 1 cup heavy cream. 1 cup grated Parmesan cheese. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: Follow the directions on the package to cook the pasta until it is al dente. Remove the water and set it aside. Melt the butter in a big pan over medium-low heat. Add the minced garlic and cook for about one to two minutes, until the garlic smells good. Add the heavy cream and bring it to a low boil. Wait two to three minutes until it gets a little thicker. Add grated Parmesan cheese and mix it in until it melts and the sauce is smooth. Add pepper and salt to taste. For garnish:. Fresh parsley, chopped. Red pepper flakes optional.
Instructions: Make the ravioli dough by combining flour and water. Knead until smooth, then cover and let it rest for 30 minutes. In a mixing bowl, combine chopped spinach, crumbled tofu, nutritional yeast, minced garlic, salt, and pepper. Mix well to create the filling for the ravioli. Roll out the dough thinly and cut into small squares. Place a spoonful of the spinach filling onto each square of dough. Fold over and seal edges to form ravioli. Boil water in a large pot and cook the ravioli for about 3-4 minutes, or until they float to the surface. Remove and set aside.
