Baking A Sourdough Bread - 5 Reasons To Learn The Craft
Sourdough bread has been a staple food for thousands of years, and for good reason. Not only is it delicious, with its tangy flavour and chewy texture, but it is also more nutritious than conventional bread. Sourdough bread is made with a natural fermentation process, which means that it contains beneficial bacteria and yeasts that help to break down the gluten and make the bread easier to digest. But making sourdough bread is not just about enjoying delicious and healthy food - it is also a craft that requires skill, patience, and dedication. Let us explore the appealing reasons behind joining bread making classes in Singapore:
Tumblr media
REASON #1: SATISFYING
First and foremost, making sourdough bread is a satisfying and enjoyable process. There is something deeply satisfying about mixing a few simple ingredients - flour, water, salt, and a sourdough starter - and transforming them into a beautiful and delicious loaf of bread. The process of making sourdough bread is slow and deliberate, with plenty of opportunities for experimentation and creativity. As you learn more about the process, you can experiment with different flours, hydration levels, fermentation times, and baking techniques, to create a loaf of bread that is truly unique to you.
REASON #2: PRACTICALITY
In addition to the enjoyment of the baking process itself, there are also practical benefits to learning the craft of making sourdough bread by joining baking courses for beginners. For one thing, making your bread is much cheaper than buying it from a store. With just a few basic ingredients, you can make enough bread to last you for several days or even a week. Plus, when you make your bread, you can be sure of what is going into it - no preservatives, additives, or other artificial ingredients that you might find in store-bought bread.
Tumblr media
REASON #3: NUTRITION
Another benefit of making sourdough bread is that it is more nutritious than conventional bread. The natural fermentation process that occurs when you make sourdough bread helps to break down the gluten, making it easier to digest. It also increases the bioavailability of important nutrients like zinc, magnesium, and iron. Plus, because sourdough bread is made with a natural sourdough starter rather than commercial yeast, it has a lower glycemic index and can be better for blood sugar control.
REASON #4: COMMUNITY
Making sourdough bread in Singapore can also be a way to connect with others and build a sense of community. Sourdough bread has become increasingly popular in recent years, and there are many online communities and local groups dedicated to the craft of sourdough bread making. By joining one of these groups or attending a workshop, you can connect with other like-minded individuals, share tips and advice, and even trade your homemade bread for other goods or services.
REASON #5: ENVIRONMENT
Finally, learning the craft of making sourdough bread can be a way to connect with nature and the environment. Sourdough bread is made with just a few simple ingredients - flour, water, salt, and a sourdough starter - and requires minimal processing or packaging. By making your bread, you can reduce your carbon footprint and contribute to a more sustainable food system. Plus, the process of making sourdough bread can help you to appreciate the beauty and complexity of the natural world, as you learn about the fermentation process and the role that bacteria and yeasts play in creating delicious and nutritious bread.
There is a good reason sourdough bread is popular in Singapore, and visit the website of Bespoke Bread to learn more about their classes and other programmes for excited bakers.

14/2/2023 - Dinner 🐖 Jamon Iberico de Bellota ($48) - cured for 48 months, its pretty salty with a sweet finish 🥖🍅 Bread with Tomato ($12) - toasted sourdough bread with tomato and EVOO, crispy with a soft centre. Goes well with the salty jamon 🥩 Wagyu Ribeye & Foie Gras Carppacio ($35) - with truffle and orange peel. Super tasty!! But kinda lacking in the foie gras and truffle department. Comes with thinly sliced bread and breadsticks 🐙 Octopus 'a Feira' ($39) - crispy pork belly with tender octopus and creamy potato foam. Octopus is quite salty but I guess it's meant to be eaten together with the foam 🦑🦐 Black Rice with 'Carabineros' ($56) - rice feels kind of risotto-like. Prawns were good but there was only 2 ): not really worth with this price 🧀🍰 Olivia Blue Cheesecake ($15) - super creamy and slightly funky blue cheese on crispy almond sable. Definitely better than when we brought this home from their dessert store (at Olivia Restaurant & Lounge Singapore) https://www.instagram.com/p/Cor0BbKPkAKH3A_K8Ck0R5vVQJZujVvJrNJTbQ0/?igshid=NGJjMDIxMWI=

Brotzeit Philippines Celebrates Its Longest Oktoberfest in 2022
Everyday’s a Fest at Brotzeit this September and October as they proudly launch their Oktoberfest 2022 celebrations, now on their 9th year in the Philippines. There’s no better place to enjoy this annual German tradition than at the country’s most popular German bier bar and restaurant. You will find lots of other hotels and restaurants with their own Oktoberfest activities, but Brotzeit continues to be the my favorite place to feast and party with friends.
This year, Brotzeit Philippines celebrates its longest Oktoberfest ever from September 12 to October 29, 2022 with exciting games and amazing prizes daily. They have also launched a special menu for Oktoberfest 2022 with a rare, limited-time only beer from Germany that you won’t find anywhere else. So don’t wait until the party’s over because Oktoberfest starts now!
My friends and I met up for an Oktoberfest reunion last night at the Shangri-La Plaza branch of Brotzeit Philippines. This is first time that Brotzeit’s Oktoberfest celebrations look this festive again, especially since the activities in the past two years were limited due to the global pandemic.
Brotzeit was conceived in Singapore in 2006 and now operates across the Asia Pacific region. It aims to introduce authentic Bavarian cuisine accompanied by world famous quality German beer in a chic and contemporary setting, so Oktoberfest is always one of its biggest events of the year.
For those who are still hesitant to dine indoors, Brotzeit’s branches in Ortigas and Bonifacio Global City both have spacious al fresco dining areas so that should not stop you from enjoying all the beers.
I finally got to be again with my soon-to-be flower girl, Chiara. She’s grown a lot during the pandemic but she’s still the sweet and playful girl that I missed playing with.
Since Chiara is half German, we got her starting early with the beers! Don't worry, she was only the server. Aside from Brotzeit’s extensive beer and beverage menu, they will be offering the Paulaner Oktoberfestbier which is a special beer brewed only for the Oktoberfest season. This is a 100% natural full-bodied Bavarian Marzen, with full rich malt flavors. Paulaner has been brewing this beer since 1818, representing centuries of brewing tradition in a stein. You can get a 0.5 Liter Mug or a 1 Liter Mug, but if you are really thirsty, go for the 3-Liter Table Barrel so everyone can enjoy endless pours of authentic German beer.
Brotzeit also has this special Schlenkerla Marzen or “Smoky Beer,” a one of a kind smoky and bittersweet beer that Brotzeit brought into the Philippines all the way from Bamberg, Germany. This is only available while supplies last.
Chiara and I also got our own hot chocolate beverages which I always like having here at Brotzeit.
Now let’s try some of the special Oktoberfest dishes! Brotzeit has created a new Oktoberfest Menu that perfectly represents the season and goes very well with the featured beers for this celebration. The Gratinierte Brezn (P120) is a gratinated pretzel topped with Emmental cheese and bacon bits.
The Bayricher Leberkäse (P420) is a Bavarian meatloaf served on a bed of creamy spinach and mashed potato then topped with fried egg. This looks like a great hangover or breakfast dish if you had too much to drink the night before.
Another Oktoberfest specialty is the Köstrizer Schwarzbier Suppe (P320) or Dark Beer Soup with cheese gratinated sourdough bread. I have never tried a beer soup before but this one was actually quite good.
Don’t forget about the sausages! The Nurnberger Stadtwurst (P900) comes with 450 grams of delicious German sausage served with sauerkraut, roast potato, and onion mustard.
On the other hand, the Oktoberfest Rösti (P350) has a crispy potato rösti topped with veal sausages, sauerkraut, bacon and a poached egg. This is another good hangover companion.
There’s also the Bayrischer Schweinskrustenbraten (P900) for the meatlovers with its gorgeous pork belly, sauerkraut, red cabbage, bread, and potato dumplings.
But the main highlight of Brotzeit’s Oktoberfest feast is the Oktoberfestplatte (P3500) which comes with almost all of those mentioned above and more. This huge Oktoberfest platter comes with Nurnberger Stadtwurst, Thuringer Sausages, Fried Chicken, and Meatloaf.
Right in the middle is the signature Brotzeit centerpiece that we always come back for whatever the occasion. The Crispy Oven Roasted Pork Knuckle is an all-time Brotzeit favorite and is the quintessential German dish. The pork knuckle is cooked until the meat is tender then oven roasted for the perfect crackling skin. The meat is actually infused with beer to give it that special taste.
The platter also comes with several sauces and side dishes including fries, potato salad, and crispy onions. This should be good enough for the entire table.
An Oktoberfest party will not be complete without games and fun challenges, so Brotzeit will also be giving away great prizes for its guests daily during the Oktoberfest season.
Try your skills at the beer mug lifting challenge, with the guys lifting these big heavy barrels instead. There’s also a beer drinking contest where the fastest group wins great merchandise and prizes from Brotzeit.
Brotzeit Philippines is opening their third branch soon at Alabang West Parade on October 8, 2022. That brings the Oktoberfest action much closer for those living in the south. If you prefer to celebrate at home with the family, Brotzeit is also available for deliveries every day from 11:00am to 11:30pm at www.brotzeitdelivers.com. So whatever the location and occasion, Brotzeit is always there to give us a memorable Oktoberfest party. Prost!!!

The Rise of Sourdough Bread in Singapore
Sourdough bread, unlike its commercially produced counterparts, is leavened through natural fermentation. It requires only three essential ingredients: flour, water, and salt. What sets sourdough apart is its reliance on a wild yeast and lactic acid bacteria culture, commonly known as a "starter." The process involves a lengthy fermentation period that can span anywhere from 12 to 48 hours, resulting in a distinct tangy flavor and airy texture.
One of the driving forces behind the sourdough trend in Singapore is a growing awareness of the health benefits associated with this artisanal bread. Sourdough bread is renowned for being more digestible than conventionally leavened bread. The long fermentation process breaks down gluten, making it easier for many people with gluten sensitivities to enjoy bread without discomfort. Additionally, the presence of natural probiotics in sourdough bread contributes to a healthier gut microbiome, which has a positive impact on overall health.
Singaporean bakeries and home bakers have embraced sourdough as a healthier alternative. Many establishments now offer a variety of sourdough bread options, including whole wheat, multigrain, and even gluten-free varieties, to cater to a wide range of dietary preferences.
Another reason for the popularity of sourdough bread in Singapore is its distinctive taste and texture. The extended fermentation process results in a complex flavor profile, characterized by a delightful tanginess. The crust is crisp, and the crumb is soft and chewy, making each bite a delightful experience for the palate. Sourdough bread can be enjoyed on its own, with a spread of butter or jam, or as a complement to various dishes.
In addition to its unique taste and health benefits, sourdough bread has captured the imagination of artisanal bakers and home enthusiasts. The process of making sourdough is a labor of love that requires skill, patience, and dedication. Each baker's starter culture is unique, leading to bread with distinct characteristics. This individuality is celebrated in the local sourdough community, with bakers sharing their experiences and experiments in pursuit of the perfect loaf.
Many artisanal bakeries in Singapore have adopted the sourdough tradition and now offer a diverse range of sourdough bread options. These bakeries take pride in using locally sourced and organic ingredients whenever possible. Some even experiment with unique flavor combinations, Sourdough Bread Singapore such as adding herbs, seeds, or dried fruits to their sourdough loaves.
The sourdough trend has not only expanded the bread options available but has also created a sense of community among bread enthusiasts. Home bakers often come together to share tips, recipes, and sourdough starter cultures. The process of nurturing a starter culture is akin to caring for a pet, and the sense of achievement and satisfaction that comes from baking a perfect loaf is a shared joy among enthusiasts.

Sourdough Bread Baking
Tumblr media Tumblr media Tumblr media Tumblr media Tumblr media Tumblr media Tumblr media Tumblr media Tumblr media
I successfully baked a loaf of sourdough bread after 2 not so good tries. I definitely need some improvement but hey, I’m proud! It took me 8 hours to make the sourdough starter, S&F maybe 4-5 times at 30-40 mins each other. I did a tiny loaf so I can’t really stretch it. Bulk fermentation for 3 hours, proof for 4 hours then I baked it following a beginner’s recipe from the Sourdough Baking Singapore page.
